Economy Steak

Back in the day when times were tough and people couldn’t afford to buy steak, they made what they called Economy Steak. Now it doesn’t taste anything like steak to me but it does taste like a cross between a meatloaf and a hamburger. I think that’s what I like about this recipe, it’s not a hamburger or a meatloaf and definitely not a steak. Someone gave me this recipe back in the 70’s and it called for broiling, however, I fry it. The recipe also calls for onions which I really, really wanted to add but because I made these for my grandkids I left them out. I will make sure to put them in the recipe card below.

Ingredients – and onions!

In a medium bowl combine the ground

beef, onion, salt, pepper, evaporated

milk and bread crumbs.

Divide the mixture into four patties

using your hands. If it sticks to your

hands, rinse your hands in cold water first.

Cook in a large frying pan over medium

heat until no pink remains. Serve immediately

 

Economy Steak

Ingredients

  • 1 lb ground beef
  • 1/2 onion, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2/3 cup evaporated milk
  • 1/3 cup plain bread crumbs

Directions

  1. In a medium bowl combine all of the ingredients.
  2. Divide into four equal portions.
  3. Using your hands, form the mixture into four patties about 1” thick. If it sticks to your hands, wet your hands in cold water first.
  4. Place the patties into a large frying pan.
  5. Cook over medium heat until brown and no longer pink inside.

  1. That’s interesting with the evaporated milk. We have something similar here in Australia, called rissoles. Instead of the milk though we use an egg. I’ll have to try it with the milk instead next time.

  3. Dear one can afford to buy the whole beef cow but here no thanks only milk cows sold after dry off as beef. Pity none of your firms selling real steak will sell to me here.Id pay for best beef and steak but who will supply me. Buy more land go to England by four black cattle mainly Angus from my cousin and ship them back on mafia boat to breed here for my needs. See even that needs illegal crews and it will not sit well with God so cant do that either.Would love a real 2 inch thick Porterhouse steak right now. Rib Eye will do me if not.

    • I have a side of beef coming in a few weeks. We get half a cow once a year. I guess I never appreciated how fortunate we are to fill our freezer with the meat. My husband prefers hamburger patties over steak so I get all of the steak. Wish I could share one with you!
