Slow Cooker Chicken & Stuffing-Version 2

Do you want delicious chicken waiting for you when you get home? Or maybe you are just really busy and won’t have time to fix dinner like I did. Either way, throw this chicken recipe into your slow cooker and dinner will be waiting for you! The vegetables cook under the chicken cooking them perfectly. The stuffing sits on top of the chicken giving it the perfect moistness.

Ingredients

Add the prepared onion, carrots and celery to the slow cooker.

Pour 1/3 cup of the chicken broth on top.

Place the chicken breasts on top of the vegetables.

My chicken breasts were gigantic so I cut them in half but you don’t need to.

Put the dry Stove Top Stuffing, soup and the rest

of the chicken broth into a medium bowl.

Using a large spoon, combine the ingredients.

Using the spoon, place the stuffing on top of the chicken.

Try not to let the stuffing fall onto the vegetables or it will get soggy.

Cook on low for 4 to 6 hours or high for 2 to 3 hours

just until the chicken reaches 165 degrees F.

Do not over cook or the chicken will be dry.

Remove from the slow cooker and serve!

Ingredients

  • 1 box Chicken Stove Top Stuffing
  •  1 onion, diced
  • 2 celery stalks, sliced
  • 2 carrots, peeled and sliced
  • 1 can cream of chicken soup
  • 3-4 large chicken breasts, skinless and boneless
  • 1 – 14 oz can of chicken broth, divided
  • salt and pepper to taste

Directions

  1. In a slow cooker add the prepared onion, carrots and celery. Pour 1/3 cup of the chicken broth on top.
  2. Place the chicken on top of the vegetables.
  3. Salt and pepper the chicken.
  4. In a medium bowl combine the Stove Top Stuffing, soup and the rest of the chicken broth.
  5. Using a large spoon, place the stuffing on top of the chicken. Be careful to keep the stuffing on top of the chicken so it doesn’t fall on the vegetables and get soggy.
  6. Cook on low for 4 to 6 hours or high for 2 to 3 hours or until the chicken is 165 degrees F and vegetables are tender. The thickness of your chicken will determine how long it will take to reach 165 degrees.
  7. Remove from the slow cooker and serve!

      • You should incorporate your Ninja 3 in some of your posts and then casually send it to the company Diane. (Without making it look like you are promoting their product.)

      • You just include a shot of your Ninja 3 in some of your pictures you take … sometimes in movies or TV shows they make a point of showing a brand of food, drink, or something else … just subtly and it gives a nod to the Ninja3. Then one day write them and tell them how you are able to prepare meals for your cooking blog in “x” times what it would take with an regular slow cooker – praise it up. Tell them it is a hobby, and since this is not your livelihood, but a hobby as you already have a job, you tell them that time is precious to you, so it enables you to be able to prepare multiple parts of your meal at one time, with less hassle, less muss and fuss and still have time to blog about it … see my blog indianeskitchen.wordpress.com … see where you get with it, but ensure you have included a few shots over the course of a few months of their product. And say you are a “gadget girl” but this is your “go-to gadget” for your hobby. They might just put your review on their website and link to your blog, or they might send you coupons if they have other products.

        I wear Easy Spirit “Punter” walking shoes. I am not hard on my shoes despite all the walking. I keep a log of miles, and when I retired my last paid of shoes as they had a hole in the bottom, I computed I had walked about a 1,000 miles in them (if not more) if memory serves me right. I wrote Easy Spirit in the “contact me” of their website and said I had walked all those miles and they were not misshapen or the heel areas worn down, but they had a hole and what a great product. They never acknowledged my statement. That surprised me and I buy my shoes in a small shoestore that has been around for decades, family run and very attentive. I told her what I did and she was surprised that they never acknowledged my nice comments. I just thought it was worth mentioning- I knew they would not send a voucher for new shoes, but I was surprised they never e-mailed back an acknowledgment of my praise for the shoes.

      • I am surprised they didn’t contact me either as I praised up their shoes. The owner of the shoe store thought it was odd too because Easy Spirit is one of the most popular walking shoe brand. Yes, do think on that little bit of marketing Diane and see if you might do something with it. So, you’re not Rachel Ray – you’re you, and they may get a kick out of your using their product for your food prep.

I am very late getting here – went on a little river boat cruise and wanted to write about it for Sunday and was late enough without having to interrupt it to do something for my boss. I might not make it to Reader until Monday night now. I would seriously think about promoting your blog that way.

  1. Question. I have a slow cooker but hardly ever use it. I thought all meat had to be submerged in liquids over top of everything in the slow cooker bowl. It used to make far too much liquid and so I think maybe ask if Im doing this wrong. Result is only use slow cooker for Irish meat stew. Can you advise dear lady

    • Oh no the meat doesn’t need to be submerged. I put ribs, roast, chicken…everything in mine. My ribs cook on their side leaning against foil wrapped whole potatoes…..no liquid added and even the potatoes are wonderful.

  2. Just wanted you to know that I made this last night in my little-used slow cooker that I received as a wedding present years ago. It was great! So easy to make and I followed your recipe and directions precisely. The chicken breast was moist, the stuffing not soggy and the vegetables underneath the chicken made the most wonderful broth.   3. I was looking for a recipe just like this recipe but had never found it….until you! This is like a Thanksgiving dinner except with chicken.
    And after all, there’s something to be thankful for every day isn’t there.
