Smothered Honey Mustard Chicken
This is definitely one of the best chicken breast recipes I have ever made! Smothered with bacon, mushrooms and the homemade honey mustard made this dish fabulous! The chicken was easy to prepare and turned out so moist! My husband must have told me five times how good it was as he was eating it, so it looks like I’ll be making this again!
Source: I adapted this recipe from a recipe by Annie Bonham. This recipe is supposed to taste like Outback Steakhouses Alice Springs Chicken.
Ingredients
Pound the chicken breasts to about
1/2” thick. Sprinkle the chicken with the
seasoned salt, cover and refrigerate for about
30 minutes. Meanwhile cook the bacon
until crisp, saving the grease. Place
cooked bacon on a paper towel and
crumble when cool.
In a small bowl, mix the honey mustard
ingredients, whisking until combined.
Spray a 9″ x 13″ baking dish with cooking spray.
Heat up the bacon grease over medium
heat. Add chicken and cook for about
five minutes on each side.
Place chicken into the baking dish.
Pour honey mustard over top of the chicken.
Place the cooked bacon pieces on top.
Place the mushrooms on top next.
Sprinkle cheese over all of it.
Bake in a preheated 350 degree
oven for 30 minutes.
Using a spatula, place chicken
on a plate and serve.

Ingredients
- 4 boneless skinless chicken breasts, pounded to about 1/2″ thick
- Seasoned Salt, to taste (I used Lawry’s)
- 6 slices bacon
- 4 oz. can mushrooms, stems and pieces
- 1 to 2 cups shredded cheddar cheese, or your favorite cheese
Sauce
- 1/4 cup regular mustard
- 1/3 cup honey
- 2 Tbsp mayonnaise
- 2 tsp dried onion flakes
Directions
- Place chicken flat on a plate and sprinkle with seasoned salt. Cover and refrigerate for 30 minutes.
- In a large pan over medium heat, cook bacon until crisp. Set aside the pan and the grease for later. Place bacon on a paper towel. Let cool and crumble.
- Preheat oven to 350 degrees.
- Prepare the honey mustard by mixing the mustard, honey, mayonnaise and dried onions in a small bowl, set aside.
- Heat the bacon grease over medium heat until hot. Add chicken and cook about 5 minutes on each side.
- Spray a 9″ x 13″ baking pan with cooking spray.
- Place chicken flat into the pan. Pour all of honey mustard all over the top of the chicken.
- Place crumbled bacon on top of chicken.
- Place mushrooms on top of the chicken.
- Sprinkle as much shredded cheese on top of the chicken as you would like.
- Bake for 30 minutes until the chicken is cooked through and the cheese is melted then serve.

Hi there, Diane. Hope all is well. Been sober since 9/12. Not easy. A bizarre schizophrenic with narcissistic personality disorder (need an official diagnosis) has come out. So far, no one has taken me out (that’s paranoia). I wrote off my family because they lost patience with me, esp my religious sister, who does feel normally and, unfortunately, judges me morally. I’ve started over again with a church’s support and therapy and a new antipsychotic. My ex-psychiatrist lost his patience and started name-calling. It wasn’t my fault. I drank as heavily as I did in order to feel emotions like a normal person. Well anyway, the help of women motivates me much better than that of men, usually. Sensitive men do exist, and also insensitive women. But the rule is that women are far more sympathetic and just plain fun to be around! Thanks for reading this. It’s 4:37am and pitch black night. The med probably causing insomnia. Looking ahead to daylight. The sun for me symbolizes the truth of life. It’s the only religion I need. Sorry for rambling. Enjoy your own dishes, too.

Yes it is just plain yellow mustard. I am not a big fan of mustard but this was amazing! Yes top it off with cheese.

Heck no! We had BLT’s for dinner tonight, I’m so addicted. I asked my 7 year old grandson if he wanted one, he said no just a bacon sandwich. Offered to put turkey with it, nope. Verified he wanted it toasted, nope. He said “Grandma, I want bacon on bread with ketchup! You always put ketchup with meat!” 😱
