Chicken Parmesan
My husband nailed this Chicken Parmesan when he made it for us for supper! The chicken was so moist, tender and the flavor was amazing. He paired it up with some rotini mixed with the leftover spaghetti sauce to complete his meal.
Ingredients for the breading.
Add mozzarella cheese and your favorite spaghetti sauce to top it off!
Place the chicken in plastic wrap and pound so it is all the same thickness.
Melt the butter in a large frying pan over medium heat.
Combine all of the dry ingredients on a large plate.
Coat the chicken breasts in the dry ingredients and place in the hot frying pan, browning until golden brown and 165 degrees.
Preheat oven to broil.
Cover a baking pan with foil. Place the chicken on the foil covered pan.
Using a spoon, spread spaghetti sauce on top of the chicken.
Sprinkle cheese on top.
Place under the broiler until the cheese is hot and melted then serve.

4 medium chicken breasts
2 Tbl butter
1/2 cup spaghetti sauce (your favorite)
1 cup shredded mozzarella cheese
Chicken Breading
1/2 tsp Italian seasoning
3/4 cup flour
1 tsp salt
1/2 tsp pepper
1/2 tsp paprika
Directions
Preheat the broiler.
Cover a baking sheet with foil.
On a plate combine dry ingredients.
Place chicken in between plastic wrap and pound the chicken so it is all even in size, but not too thin.
Dip chicken in the dry ingredients.
Melt butter in a large frying pan over medium heat.
Place chicken in frying pan with butter and cook until lightly brown with internal temperature of 165 degrees.
Place chicken breasts on a baking sheet. Top with spaghetti sauce. Top with cheese and broil about 5 minutes until cheese melts and serve.

PS – I ‘ve always wondered why they call this recipe chicken parmesan when it always uses more mozzarella than parmesan. Weird isn’t it? It’s such a simple recipe but soooo good!
