Cheesy Hamburger Casserole
Cheesy Hamburger Casserole is full of ground beef, potatoes, pasta, tomato sauce and vegetables then topped with bacon and cheese. This is a complete meal baked in one dish.
Ingredients
Boil pasta according to package directions, drain and set aside.
In a large fry pan cook ground beef, onion and celery.
Lightly spray a 3 quart casserole dish with cooking spray.
Add cooked ground beef mixture, salt and pepper.
Layer potatoes on top of ground beef mixture.
Layer pasta on top of potatoes.
In a small bowl, whisk soup and V-8 Juice (or tomato juice) until combined and smooth.
Pour on top of pasta spreading it out evenly. Cover with a lid and bake for 70 minutes.
Remove from the oven and sprinkle bacon on top.
Sprinkle with cheese and put back in the oven a few minutes to melt the cheese.
Spoon out onto a plate and serve.

- 1 – 10.5 oz can cream of mushroom soup
- 5 slices bacon, cooked and crumbled
- 1/2 cup uncooked pasta
- 1 medium onion, peeled and diced
- 2 celery stalks, diced
- 2 medium potatoes, peeled and sliced
- 1/2 tsp pepper
- 1 tsp salt
- 12 oz V-8 juice or tomato juice
- 1/4 cup shredded cheddar cheese (or more)
- 1 green part of a green onion, for garnish
- parsley, for garnish
Directions
- Preheat oven to 350 degrees.
- In a small pot cook pasta according to the package directions. Drain and set aside.
- In a large fry pan cook ground beef, onion and celery until veggies are almost tender and ground beef has no pink left, drain fat.
- Lightly spray a 3 quart oven safe casserole dish with cooking spray.
- Add ground beef mixture to casserole dish. Add salt and pepper.
- Place potato slices layered on top of ground beef mixture.
- Place pasta on top of potatoes.
- In a small bowl, whisk V-8 juice (or tomato juice) with the soup until creamy with no lumps.
- Pour soup mixture on top of pasta spreading out evenly. Put a lid on and bake for 1 hour and 10 minutes.
- Remove from the oven and sprinkle the bacon on top. Sprinkle the cheese on top of the bacon. Put back in the oven, without the lid, until the cheese melts.
- Garnish with green onion and parsley and serve.

This was more of an experiment to try the potatoes with pasta. I had never made a recipe this way before. Although it tasted great, I would have preferred all pasta or all potato, pasta being my first choice.
