Marinated Cucumber, Tomato & Onion Salad
Is it possible that three people could devour this entire Marinated Cucumber, Tomato & Onion Salad in one sitting? Yes we did! I love this so much but mostly with our fresh garden veggies. I wish August would never end! All these fresh vegetables are so delicious!
Ingredients
Start by rinsing the cucumbers and
the tomatoes. Peel the cucumbers
and slice them in half lengthwise
and then into 1/4″ slices.
Peel the onion, slice it in half
then slice it into 1/4″ pieces.
Separate all of the pieces.
Cut the top off of the tomatoes.
Cut them into bite size wedges.
Put the veggies into a large bowl.
Mix the veggies together.
In a medium bowl, mix the marinade
ingredients. I used an immersion
blender to mix mine. You can mix
anyway you would like,
even with a whisk.
Pour the marinade over the veggies
and toss. Cover and refrigerate for
at least on hour or longer. But honestly,
mine never last that long. We are into
it after 1/2 hour and it’s still delicious!

Ingredients

Marinade:
- 1 cup water
- 1/2 cup white vinegar
- 1/4 cup sugar
- 1/4 cup olive oil
- 2 tsp salt
- 1 tsp pepper
- 2 tsp celery seed
Directions

- Cut the top off of the tomatoes. Slice the tomato into bite size wedges.
- Place the veggies into a large bowl and toss with a large spoon.
- Mix together all of the marinade ingredients until the sugar dissolves. I used an immersion blender but anything will work including a whisk.
- Pour the marinade over the veggies and toss them with a large spoon.
- Cover the bowl and refrigerate for an hour or more, then serve.

Whenever I make a sweet/sour combination I always use the white vinegar because I think it tastes better than the apple cider vinegar. So yes, personal preference.
My grandmother used to keep a perpetual container of this salad in the fridge. As we used it up, she’d just keep adding more
veggies to the mix, with the original vinegar dressing, which miraculously never seemed to run out. Somehow, like sourdough starter, it just kept replenishing itself!

Another version to the dressing is apple cider vinegar with pepper, and the onions used would be sweet onions. Yum
