Microwave Scambled Eggs
This is the only way I make scrambled eggs….. in the microwave. I like to make these for my grandchildren too, they love them. Microwave Scrambled Eggs are so fluffy and moist and you get nice big pieces you can eat with a fork. Four eggs are done in about 2-1/2 minutes depending on your microwave. I like to use Half & Half in my eggs to give them a rich creamy texture. My favorite part is you can make them, microwave them and eat them all out of the same bowl.
Ingredients
Whisk eggs, Half & Half, salt and pepper in a bowl.
Microwave for one minute on high and stir with a fork. Microwave for 30 seconds more and stir. Microwave another 30 seconds and stir. Microwave one last time for about 30 seconds and stir and they should be done.

4 large eggs
2 Tbl Half & Half (milk will work too)
Salt and pepper to taste
Directions
In a medium bowl whisk eggs. Add Half & Half, salt and pepper. Whisk until combined.
Microwave on high for 60 seconds, stir with a fork.
Microwave a second time 30 seconds, stir with a fork.
Microwave a third time 30 seconds, stir with a fork.
Microwave one last time for about 30 seconds or until the eggs are thoroughly cooked, but not over cooked. Watch carefully the last 30 seconds so they don’t overcook or they will be dry. Total cooking time is 2-1/2 minutes depending on your microwave.
Be careful as bowl will be hot. Enjoy!
Nice. I always get mixed up between scrambled eggs and very yellow mash potatoes.
They both can be made in the microwave!

I’ve never done eggs in the microwave – I always thought they would be like rubber – but yours look wonderful – so fluffy. I know Hubby will be glad to have eggs cooked in the same dish. How many eggs can you do at a time? We scramble 9 eggs in a skillet for the three of us.
The secret is stirring them (to keep them from being like rubber) and not over cooking them. I’m sure you could do 9 eggs at once but you will have to figure out the exact time. I would start with 2 minutes and stir. Then every 30 seconds cook and stir repeating just until cooked through. They do cook fast. Use a large bowl because they puff way up while they are cooking.
