Spaghetti With A Twist

I always look forward to Sundays. My grandchildren (age 2 & 5) visit for about 14 hours. Now keep in mind, I am not a morning person! Yet when the alarm goes off at 6:15 am I have no problem getting up to see their smiling faces at my door. Feeding them throughout the day is no problem, they eat everything in sight! Then comes supper time. My 2 year old will eat anything but my 5 year old wants the same thing every week, spaghetti or chicken. This dish is a quick and easy way to make it taste like spaghetti with a twist…no pun intended.

Ingredients

1# ground beef

1 medium onion, diced

1# rotini pasta

48 oz. spaghetti sauce (I use Prego traditional)

1 cup shredded mozzarella cheese

parsley for garnish (optional)

Directions

Preheat oven to 350 degrees. In a large frying pan cook ground beef with onion until no longer pink. Drain the grease. In a large pot of boiling water, boil Rotini until al dente, drain and return to the large pot. Pour ground beef mixture and spaghetti sauce into the pasta. Mix with a large spoon being careful not to ruin the Rotini shape. Pour into a large oven safe casserole dish with a lid. Bake for 30-40 minutes or until hot and bubbly. Remove from the oven and sprinkle cheese over the top. Place lid back on until cheese melts. Garnish with parsley.                                    www.InDianesKitchen.com
