Homemade Banana Bread Recipe

Don’t you hate it when you buy bananas and they get ripe too fast? Don’t throw them away! Use four medium, very ripe, bananas and you can make this recipe which gives you two delicious loaves of Banana Bread. One for you and one to give away.

 

Preheat oven to 350º. Grease the bottom only of 2 (8×4 inch) loaf pans or 1 (9×5 inch) loaf pan.

 

In a large bowl cream the butter and sugar until completely combined.

 

Add the eggs, banana, buttermilk and vanilla extract.

 

Beat with an electric mixer on medium speed until smooth.

 

Stir in the flour, baking soda, salt and nuts (optional) just until combined and completely moistened.

 

Pour evenly into the prepared loaf pans. Bake the two 8” loaf pans for 55-60 minutes or the 9” loaf pan for 1¼ hours, or until a toothpick inserted in the middle comes out clean.

 

Cool in the pans for 10 minutes. Carefully use a knife and loosen the bread from the sides of the pan. Remove the bread and place on a cooling rack.

 

Let cool completely, slice and serve.

  1. I really like Banana bread. Been a while since I’ve made one, still your post, as well as making me feel hungry, will inspire me to do so! Just made an Apple and Rhubarb. Crumble today, so will probably have that later for tea 🙂

    • I grow rhubarb and always have it in the freezer. I make a strawberry and rhubarb pie among other sweets but have never used apple! What a great idea Paul, I will have to try that. What kind of apple do you like with your crumble?

      • Oh, that sounds great. Always nice to have such a tasty ingredient to hand like that. Yeah, rhubarb and apple seems like a strange combination but it really works surprisingly well together. I tend to use just regular cooking apples, or whichever is in season really. The first time I had that crumble was in a restaurant, and I enjoyed it so much I was cheeky and asked them for their recipe 🙂

      • I have never tasted rhubarb before. Also, banana bread is one of my favorite desserts!

      • Rhubarb is very tart. We ate it plain when I was growing up and I reached through the neighbors fence to steal one. He was very old and never picked it. I made banana bread with chocolate chips and it was like dessert. Have a great day!

  2. Do you know of anything that you could use instead of over a cup of sugar? Maybe applesauce? I am saving my sugar for hummingbirds lol those tiny ones move more than me 🙂

  3. I love banana bread. Because I’m not home, I can’t be sure, but this looks very similar to the recipe that I use. Sometimes I put chocolate chips in rather than nuts just for a change.

      • Yes, it was delicious. I’ve done that too – I saw something after I wrote the comment that next Monday, February 23rd was National Banana Bread Day – do you have another recipe for it?

      • That sounds good too. Did you hear on the news today about the grandson of the person who created the Reeses Peanut Butter Cup getting angry with how they make them now. Apparently, they don’t taste as good as they use different ingredients, like peanut “creme” instead of real peanut butter.

      • No I didn’t, how interesting that is. I love them anyway, but the grandkids will only eat the regular peanut butter cups from them, they don’t like the others as they have more peanut butter so maybe that’s why.

    • Thank you for such kind words Ab! My husband and I got take out from Outback Steakhouse. I made brownies for my granddaughter, the banana bread for my grandson, my husband made his potato soup for my daughter and we bought candy for my 96 year old MIL.
