Libby’s Famous Pumpkin Pie Recipe

Who doesn’t love pie at Christmas time? Libby’s has my favorite pie recipe that I have made for decades. This can be made the day before which saves on that rush on Christmas morning, especially if you have kids.

In a large bowl add the pumpkin. In a small bowl combine the sugar, ground cinnamon, salt, ground ginger and ground cloves. Add the sugar mixture to the pumpkin and whisk to combine.

Add the milk and eggs.

Whisk to combine.

Place pie dough into a 9” deep pie dish.

Pour the filling into the pie dough. Bake in a preheated 425º oven for 15 minutes. Reduce temperature to 350º and bake about 40 minutes. Pie is done when a knife inserted in the middle comes out clean.

Let cool on a wire rack for 2 hours, serve or cover with plastic wrap and refrigerate. If serving after you refrigerate, let the pie sit out for a couple hours then serve. Refrigerate leftovers.

  • 1- 15 oz can 100% pure pumpkin

  • 3/4 cup granulated sugar

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 1/2 tsp ground ginger

  • 2 large eggs, whisked slightly with a fork

  • 1 can (12 fluid ounces) evaporated milk

  • 1- unbaked 9” deep dish pie dough (4 cup volume)

Directions

  1. Preheat oven to 425º.

  3. In a small bowl combine the sugar, ground cinnamon, salt, ground ginger and ground cloves. Add the sugar mixture to the pumpkin and whisk to combine.

  4. Add the milk and eggs, whisk to combine thoroughly.

  5. Place pie dough into a 9” deep pie dish.

  6. Pour the filling into the pie dough.
