Libby’s Famous Pumpkin Pie Recipe

Who doesn’t love pie at Christmas time? Libby’s has my favorite pie recipe that I have made for decades. This can be made the day before which saves on that rush on Christmas morning, especially if you have kids.

In a large bowl add the pumpkin. In a small bowl combine the sugar, ground cinnamon, salt, ground ginger and ground cloves. Add the sugar mixture to the pumpkin and whisk to combine.

Add the milk and eggs.

Whisk to combine.

Place pie dough into a 9” deep pie dish.

Pour the filling into the pie dough. Bake in a preheated 425º oven for 15 minutes. Reduce temperature to 350º and bake about 40 minutes. Pie is done when a knife inserted in the middle comes out clean.

Let cool on a wire rack for 2 hours, serve or cover with plastic wrap and refrigerate. If serving after you refrigerate, let the pie sit out for a couple hours then serve. Refrigerate leftovers.

1 can (12 fluid ounces) evaporated milk

1- unbaked 9” deep dish pie dough (4 cup volume)

It’s always been my family’s favorite. However, I did make a sweet potato pie using the same spices and I couldn’t tell it was sweet potato. Lol
That was an interesting experiment–good to know!
We love pumpkin pie. I make mine using home grown pumpkin and sweetened condensed milk.
I have never made a pie right from the pumpkin. I always wanted to, just to see if there is a difference in taste.
The flavor doesn’t change much but the texture might be a bit different. I have used different types of pumpkin and winter squash. All have been good.
I notice a texture difference if I order pumpkin pie from an Amish restaurant. I never thought about it being made from the pumpkin instead of a can.

My mom used this recipe as I was growing up and she still does, she’s 85 now.

I am a pumpkin pie fan, and we usually have at least three over the Holidays. This post makes me think we’ll have four this year, Diane!

It is not only delicious but smells wonderful when it is baking!

They have really good pie dough in the refrigerated section of the grocery store which makes this super easy and delicious.
I believe generations will agree with us that this is the ultimate pumpkin pie!
