Easy Chicken & Cheese Tortellini Soup

With the temperatures getting colder, this is an easy and hearty soup for any dinner. Rotisserie chicken, carrots, celery and onions cooked in chicken broth with cheese tortellini. It was even delicious the next day!

In a large pot, add the chicken broth and bring to a boil over medium heat.

Dice the onion small and add to the broth.

Slice the carrots in about 1/4” pieces and add to the broth.

Slice the celery in about 1/4” pieces and add to the broth. Add the parsley, rosemary, bay leaves, salt and pepper. Bring the broth back to a boil, turn to a simmer, cover and cook until the veggies are tender.

Add the cooked chicken to the broth and cook a few minutes until hot. Add the Parmesan cheese and stir until it melts.

Add the tortellini and cook according to the package directions. Remove bay leaves and discard. Garnish with fresh parsley, optional.

Ingredients

4 quarts chicken stock

1 medium onion, diced

2 carrots, peeled and both ends cut off and sliced 1/4” thick

2 medium celery, rinse & slice about 1/4” thick

2 medium bay leaves

3 sprigs fresh rosemary or 1/2 tsp dried

1/2 cup fresh parsley or 2 Tbsp dried

1 tsp salt or to your taste

1/2 tsp pepper or to your taste

1/2 cup freshly grated parmesan cheese

cooked chicken bite sized pieces, remove bones and skin (I use rotisserie chicken)

16 oz cheese tortellini

I love making soup with leftover rotisserie chicken. I also use the bones and carcass in the broth then strain it out after. It added extra rich flavour.
I actually buy the rotisserie chicken and wrap it up air tight then freeze it for meals, unless of course I am making the broth.
