Easy Toasted Leftover Spaghetti Sandwich

No, I’m not crazy! This is the perfect way to eat leftover spaghetti. I have always loved putting spaghetti on a single piece of bread and butter but it is flimsy and usually the spaghetti falls off.

So I thought, why not put spaghetti on thick buttered Texas style toast instead. It was a great idea as not only did it taste delicious, but the spaghetti never fell out and the toast didn’t get soggy.

Make sure the spaghetti sits overnight in the sauce to absorb the sauce flavor.

Butter all four sides of two Texas style bread slices.

Toast the buttered bread on both sides until golden brown.

Warm a small bowl of the leftover spaghetti. 

Place spaghetti with a little sauce on the toast and serve.

    • Yes! It would be easy to use garlic butter on the bread before you toast it. I left the spaghetti long and once it was on the toast it was a tangled mess and not a bit fell out because of that.

  1. No Goddess, you are far from crazy. Growing up in an Italian household this was really a staple, but with a few twists.
    We never had Texas toast. We used crunchy Italian bread, maybe warmed up a little. (We NEVER ate white American bread.)
    Also, and this is true, the leftover spaghetti was FRIED, really. That gave it a lot of crunch. I can still taste it after all those years. That is only one reason that I was rather chunky as a kid. But it was worth it. Enjoy this one, Goddess. It’s one of the things the Lord will serve in heaven!!

  2. Sounds interesting. Have you ever had a mashed potato sandwich? I had one years ago in a small German restaurant in Flagstaff, AZ. I’ve made them eversince. Toasted garlic bread, mashed potato on top, slice of cheese over a tomato slice on top of the mashed potatoes, plenty of garlic, broil until cheese melts and all is warm…..so yummy!

My mom would have to have that – she loved her cold spaghetti and would apologize to me that we did not having enough leftovers for a second night for both of us as she would keep going into the fridge and taking some out the day after. 🙂 So she would make me tuna melt (which I loved) and she’d finish off the leftover spaghetti. Sometimes she made a lot to begin with and made baked spaghetti the next day. I would enjoy this. I think I mentioned before that my aunt’s/grandmother’s friend lived down the street from them and was Italian and her elderly father lived at their house and he insisted on pasta every night for dinner, if not a main dish, at least a side dish. So, every time we would visit my grandmother, Lorraine brought down a huge pot of spaghetti and meatballs for us. My aunt would go to the store and get Kaiser buns (the crispy kind, not soft, but more the consistency of French bread that made crumbs all over the place) and I’d have meatball sandwiches – yum. We also used to go to a place called “No Frills” which made cheddar cheese buns and the top of the bun was hard where the melted cheddar had dried … also nice with the meatballs. This sounds very appealing to me!

  4. Well, I can honestly say that I have never tried this with leftover spaghetti (but then again, there is rarely spaghetti leftovers when we make it). I will have to make spaghetti especially to try your recipe … I must say, it looks delicious!

    • It really was delicious but the butter made it! Sprinkle a little garlic powder in the butter before you butter the bread and it’s just like having garlic toast with the spaghetti. When you try it let me know what you think.

    • Oh yes, all their pasta tastes great! I never eat all mine when we go but I know what I will do with it next time. I might even try it with the Alfredo pasta. Thank you Doreen, you are so inspiring.
