Thai Cucumber Salad Recipe

The perfect salad for a picnic or at home! The first time I made this recipe I knew I would be making it every year. Made with cucumbers, red pepper flakes, sesame oil, sugar, vinegar, green onion and peanuts (optional). It is one of the best dressings I have ever had on cucumbers.

Looks refreshingly delicious! I too have switched to using rice vinegar as my vinegar of choice. Has a nice flavour to it.

It sure is and what a season it has been!
They look very crisp and fresh and that dressing won’t make the cucumbers soggy.
We couldn’t eat them all yesterday so I finished them for lunch today, they were still delicious and had a crunch.
I like crunchy cucumbers – I never liked them when they were soft/mushy. When my mom had her hip revision surgery, I did all the cooking (except what our neighbor sent over – he was taking care of his dad and he worked Summers as a chef as a resort) … anyway, I’d be making a salad and she got exasperated with me and have me take the cutting board over to the table so she could peel the cucumbers and slice the tomatoes. This is why I never learned to cook … she was impatient and when I cut cucumbers, by the time I skinned them, there was nothing left. 🙂
Awe it does take patience to teach someone to cook. But getting a meal from a chef wasn’t so bad!
It was great Diane as Nicky made a lot of delicious food while caring for his dad. He’d call and say “I’m coming over in five minutes with a pan of lasagna so have your oven mitts ready!” He made some wonderful soups too. His dad had no appetite but Nicky kept making meals to entice him to eat. He told my mom he wanted to make sure she recovered from her hip surgery and didn’t wither away. 🙂

Cucumber salad is one of our favourite salads in the summer. Berto will love the red pepper flakes in this salad — if summer is here, I’m definitely going to make it!
Let me know how you like it when you do fix it. Play around with the sugar amount to your liking. You might like 3 Tbsp of sugar instead of 4. For me 4 tbsp is perfect with the vinegar.
Thanks, I’m going to keep that in mind. Hot weather is forecast for this weekend – 30°C/86°F and that in winter! So, it would have been perfect to make this salad, but now we are going to a safari lodge where they have a restaurant and we don’t have to make food.
You are lucky to see so many places! Sometimes it is so nice to get a break from cooking. You show so many delicious meals.
