Baked Cheesy Taco Zucchini Boats

Zucchini filled with taco seasoned ground beef, tomato, taco sauce, tomato sauce, onion and any of your favorite taco ingredients then top all of that with cheese. Bake and garnish with sliced green onion and sour cream (optional) before serving.

    • My husband cut the garden WAY down this year so now we have to buy it. I miss having all my goodies right in our backyard so much but thank God for the farm stands. Enjoy your zucchini!

  1. A fun way to enjoy veggies! I made a butternut squash boat the other day using chorizo sausage. Same idea. So fun!

    • It took me a long time making different recipes. I never liked zucchini when I was a child because all my mom did was bread and fry it. These recipes have so much flavor. I’m actually having the taco boats tonight.

  2. Some like lettuce sandwiches … but you can’t sink your teeth into a lettuce sandwich, but now this is a different story! With all the heat and rain we’ve had, anyone with a garden will be reaping harvests of zucchini bigtime!

  3. The paper towel in your zucchini is such a great tip – having seen it on your blog before, I always do it now when I need to take out the seeds. And this is a great dish (perfect for a Sunday night I think).

    • Thank you Corna! I just made this again two days ago, my husband eats and moans ummmmm until it’s gone. He must have told me three times how good it was.
