Baked Cheesy Taco Zucchini Boats

Zucchini filled with taco seasoned ground beef, tomato, taco sauce, tomato sauce, onion and any of your favorite taco ingredients then top all of that with cheese. Bake and garnish with sliced green onion and sour cream (optional) before serving.

It took me a long time making different recipes. I never liked zucchini when I was a child because all my mom did was bread and fry it. These recipes have so much flavor. I’m actually having the taco boats tonight.
Some like lettuce sandwiches … but you can’t sink your teeth into a lettuce sandwich, but now this is a different story! With all the heat and rain we’ve had, anyone with a garden will be reaping harvests of zucchini bigtime!
Yes my daughter picked 3 large zucchini and a yellow squash, she wanted recipes. Lol
‘Tis the season for them. Time for zucchini bread too. On FB in my City Resident’s Group, a woman posted a picture of a huge basket of yellow squash and said anyone who wants it, this is on my front porch and gave her address.

Yes, the way things are anymore around this City, they’d probably clear out the squash and the take what they were in as well.
The paper towel in your zucchini is such a great tip – having seen it on your blog before, I always do it now when I need to take out the seeds. And this is a great dish (perfect for a Sunday night I think).
