Slow Cooker Chicken, Sausage & Potatoes-Version 2

How can you resist making a slow cooker meal made with chicken thighs, potatoes, and andouille sausage then topped off with onions and Rotel. Not crazy about andouille sausage, exchange it with Kielbasa. The liquid was so delicious that I am going to have it tomorrow for lunch along with some of the leftovers.

My slow cooker is becoming my best friend since my kitchen remodel is moving full speed ahead. We are cooking in the dining room on a folding table.

Place the chicken thighs on the bottom of the slow cooker.

Place the potatoes on top.

Salt and pepper to taste, I used 1 tsp. salt and 1/2 tsp pepper.

Add the andouille sausage.

Add the sliced onions.

Combine the Rotel, garlic, brown sugar and chicken broth in a bowl.

Pour the tomato mixture evenly over the onions and cook on low for about 6 hours or until chicken is 165º and vegetables are tender, then serve.

Ingredients

  • 5-8 chicken thighs, boneless and skinless
  • 2 large potatoes, peeled & sliced 1/2” thick
  • salt & pepper to taste
  • 13 oz Andouille sausage link, sliced in 1” pieces
  • 1 large onion, sliced
  • 2-3 cloves garlic, minced
  • 14 oz can chicken broth
  • 10 oz can Rotel with green chilies
  • 2 Tbsp. brown sugar
  • parsley for garnish

Directions

  1. Place the chicken thighs on the bottom of the slow cooker.
  2. Place the potatoes on top.
  3. Salt and pepper to taste, I used 1 tsp. salt and 1/2 tsp pepper.
  4. Add the andouille sausage.
  5. Add the sliced onions.
  6. Combine the Rotel, garlic, brown sugar and chicken broth in a bowl. Stir until the brown sugar is dissolved.
  7. Pour the tomato mixture evenly over the onions and cook on low for 6 hours or until chicken is 165º and vegetables are tender then serve garnished with parsley.

    • I don’t know what I would do without it!!! The lighting to take good pictures is hit or miss though. There’s not a lot of light in our dining room where I cook and take pictures. Thank you Carla

  1. I’ve never thought about mixing chicken and sausage, but it seems like a delicious dish! I’m not sure if we’ll find that sausage here in our stores, but I’m definitely going to look for it (or something similar).
    Ha, you’re going to miss your dining room and folding table when your new kitchen is finished Diane!

    • Any smoked or already cooked sausage will work. The picture is awful but trust me, the recipe is delicious. I think taking all the dishes downstairs into the basement, washing them in a plastic container in the utility sink will be what we will miss the most! Or maybe the styrofoam plates and plastic silverware. 🥴

    • It was delicious but the lighting in the dining room is awful! If I take a picture in there before 3:00 pm the sunlight really helps. After that the picture just doesn’t look good. I must admit though, I’m ready for my stove, sink and water as this is exhausting, two more weeks. 👏

  4. How did we cook before we had slow cookers, instant pots, and air fryers? My grandmother never had anything but a wood stove and cooked for a husband and 10 children. Makes my head spin!

    • It tasted much better than the picture turned out. I don’t have good light in the dining room after 2:00-3:00 pm. The sun is good to me before that. I am praying the new lights I bought will give me the lighting I have always wanted. They will have a dimmer switch on them which I hope will help. Thank you Linda 🥰

    • It is so difficult to get good pictures once it’s past 4:00 in my dining room. This tasted amazing but the picture didn’t look anything like it was. I hope my new lighting works well for pictures. 🤞🏻

      • You could also get a tall light and plug it in nearby and turn it on just for pictures in the dining room. My lighting in the kitchen is bad and I have a tall lamp and a desk lamp … it would be better to just get a new fixture in the kitchen, but I like the colonial swag light, so I deal with it. I looked for other similar fixtures but couldn’t find any.

      • Hahaha if you look at the kitchen remodel post there is a light I used in addition to my dining room light. I am able to move each section any direction I want. The pictures still turn out bad. I should buy one of those natural lights they use for sewing. Sometimes I get really good pictures and other times I don’t. The natural light through the window is definitely my friend!

      • I did see the light with the different bulbs – good idea. My tall light I bought for my canary as it was dark in his corner. I had good lighting with the swag lamp but after I had to stop using incandescent light bulbs, then the CFL bulbs, I had to play around with various LED bulbs. The soft light bulb is nice, but the lighting is poor. If you use a brighter bulb, it is too bright … like the three bears porridge, so the extra light works better.

      • There is nothing that compares to the old bulbs. These new ones are just way too bright, I told Terry they look like landing lights. Lol

      • Ha ha – landing lights – I like that. I don’t like them either. I need to get some softer LEDs for my room. I could perform surgery in there. 🙂
