Baked Stove Top Stuffing

Baked Stove Top Stuffing is one of my favorite side dishes. It reminds me of Amish stuffing or what you would eat for Thanksgiving. Chop up the vegetables, sauté them in butter, add to boxed Stove Top Stuffing, egg, chicken broth and bake.

In a skillet over medium heat melt the butter and add the chopped vegetables.

Sauté until the vegetables are tender.

In a large bowl add the sautéed vegetables, eggs and 2 boxes of stuffing. Toss well with a large spoon.

Add one can of chicken broth and toss well. Add the second can of chicken broth and toss well.

Spray a 3 quart baking dish (with a lid) with cooking oil.

Pour the stuffing into the prepared baking dish. Let sit for 5 minutes.

Bake in a preheated 350º oven, covered for 1 hour then serve.

Ingredients

  • 2- 6 oz boxes Stove Top Stuffing
  • 1/4 cup butter (1/2 stick)
  • 1 small onion, diced
  • 1 medium carrot, peeled and diced small
  • 1 celery stalk, sliced thin
  • 2 large eggs, whisked with a fork
  • 2 – 14.5 oz chicken broth

Directions

  1. Preheat oven to 350º.

  1. Cant buy stuffing here nor can of broth .What ever we have we make and Latvia is still in the 1930s

  2. That looks good Diane – I liked Stovetop Stuffing. I found the box of cornbread stuffing and Durkee Onion Rings I couldn’t find for my Christmas meal and since we had freezing rain this morning, I made a crockpot meal instead of walking and had stuffing in the crockpot in between the layers of other stuff (veggies/noodles/soup).

  3. It’s a dish I don’t know at all. I’m not even sure if one can buy stuffing in our stores (probably, but I’ve never looked out for it). Your dish looks so nice that I’m going looking for stuffing now!
