Turkey or Chicken Noodle Soup

After eating so much food over the holidays, a simple turkey (or chicken) soup will really taste good. When they had turkey on sale, just before Thanksgiving, we bought two extra and I cut them up into sections and then I froze the sections in quantities to make soup with. This made for a very inexpensive and delicious meal.

In a large pot add the chicken or turkey,
plenty of chicken broth to cover the meat.
Bring the broth to a boil and reduce to
a simmer. Cover and simmer until the
meat is tender and completely cooked.

Remove the meat from the pot and allow
it to cool until you can touch it without
getting burnt. Discard the skin, bones and
any cartilage then cut into bite sized
pieces. Cover and set aside.

Peel the carrots and onion then cut all
the vegetables into bite sized pieces.

Strain the broth then return to the pot.
Salt and pepper to taste then add all of
the prepared vegetables. Bring to a boil
over medium heat, reduce to a simmer
and simmer, covered, until all of the
vegetables are tender.

Add the noodles and bring to a boil over
medium heat. Reduce to a simmer, cover
and cook until the noodles are tender.

Add the meat back to the pot and cook a
minute or until the meat is hot then serve.

- Peel the carrots and onion then cut all the vegetables into bite sized pieces.

Yummy! Happy New Year.
Thank you! β€οΈ
You are very welcome. π
Very hearty! It’s been cold here, a perfect time for soups!
You are right, soup always tastes so good when itβs cold.
Oh yummy π. This looks like such an easy soup to prepare (we’ll probably use chicken … I think not enough turkey have yet migrated to South Africa π). Thanks for another brilliant recipe Diane!
What? No turkeyπ Thank you and enjoy the soup.β€οΈ
This is exactly what I need after some major overindulging during the holidays! But it was fun….C
You and me too! With cancelling Christmas I had food everywhere! Cookies are almost gone then my mother in law sends a huge bag for the grandkids. π©
Our Christmas got rearranged too, COVID was wreaking havoc all over the world, and I ended up with food I had to toss because we had way too much for the reduced head count! I’m ready for some simple warm comfort food. xxoo, C
Wait until you see tomorrowβs pineapple recipe. Wasnβt that you that said you got an air fryer for Christmas?
Yes, and Iβve been afraid to try it!
Turkey noodle soup is a great way to use up leftovers and leftovers of Turkey! The hubby made one using a very similar approach and ingredients as your recipe after Thanksgiving last Fall and it was delicious!
You canβt go wrong with soup, it always seems to taste great. Thanks Ab!
I need this N O W!
Haha you need to move next door to me.
This looks so easy. I was going to put a split chicken on the grill tonight, but I think I will do this instead!
Thank you! Chicken or turkey always tastes so good in this soup, not to mention the noodles! π
So great on a rainy, cold night. It has everything you could ever need!
It is a great meal in a bowl isnβt it? I love soup. Thank you!
That looks especially delicious given how rotten I have felt since getting my flu shot and Moderna booster one week ago. And – guess what I just tested positive for? Happy to say I got the test AFTER being sick – is TENET reality? – so I am already recovered-ing. Our 12-year-old had a fever this morning, Nell decided to buy some at-home rapid tests, and… either I am pregnant, or I have COVID-19. Had COVID-19. Temporal pincers, indeed. π
I am so sorry! My daughter just had a really bad bought with Covid and I thought she wouldnβt make it through it, so scary. I am glad youβre not pregnant though! π€£ Take care of your 12 year old. My 7 year old grandson was sick for 1 day and my 10 year old granddaughter was a symptomatic. I felt so helpless and could only take food to the front porch. My granddaughter took care of her mom, brother and 2 dogs. I was so proud of her. I hope you entire family gets well soon! π
Thank you. Your warmth and kindness always make things better. 12YO has not yet tested positive – and Nell and 13YO are fine – so, fingers crossed. What gave me pause was getting a fever; I NEVER GET FEVERS. I actually run closer to 97.6. Oy. π
Nothing like soup in Wintertime … that was a smart move getting the extra turkeys while on sale.
They were only 33 cents a pound, I couldnβt pass it up.
Perfect for winter weather!
Most definitely!
Looks so good! Your recipe is very similar to my chicken noodle soup.
I use this recipe for chicken soup too. I just got a really good sale on the turkey and stocked up. Thank you KT!
Yummy! One of our favorites, Diane. Happy New Year to you and yours!

I will try this one. Looks delicious and easy to make.
Enjoy it really hits the spot on a cold day. Thank you!
Making a big pot of chicken soup today. We had freezing rain overnight and the roads are a sheet of ice. Staying inside where it’s warm and comfy. Glad I went shopping yesterday. This soup will hit the spot! π₯Ά π
Smart lady! Iβll take snow any day over ice.
Such great stuff here. So many good memories.
Awe so glad! I think our moms all made this when we were young. I donβt think they even had canned back in my day! Lol
Perfect during this time when everyone is getting sick!
I never thought of it that way, your brilliant! Lol
Chicken noodle soup is so healing. John uses a similar recipe and made me a big pot of it while I’ve been struggle with (what I hope is) a cold.
It sure is and I am so glad you have John to take care of you! Get well soon Tierney. π
