Chorizo Vegetable Soup
The best tasting spicy hot, hearty and delicious Chorizo Vegetable Soup I have ever made!!!! Very easy and quick to make with more than enough for a family or in my case plenty of leftovers too. This tasted SO good!
Ingredients – plus olive oil
In a large pot add the olive oil and
chorizo over medium heat and cook
until the meat is cooked through.
Add the beef broth, crushed tomatoes,
Italian seasoning and onion powder.
Bring to a boil then add the
frozen mixed vegetables.
Cook until the vegetables are
tender then add the parsley.
Stir and serve.

- 61 oz. beef broth
- 28 oz. crushed tomatoes
- 1/2 tsp Italian seasoning
- 1/4 tsp onion powder
- 2# frozen mixed vegetables

Directions

- Add the parsley, stir and serve.

I have tasted a variation of this. Instead of veggies the soup was filled with Carribean treats, green plantains, yucca, and potatoes. It is very good. So, I imagine this soup with vegetables has to be awesome.

Crazy weather crazy time!!! Keeping 2 of the grandkids to distant them from their mom (nurse) for who knows how long! Now to find toilet paper…lol
I heard someone quip that the reason for the TP shortage was all the family members home all the time now, kids especially … that is wise since she is a nurse. Hope she stays safe out there. Yesterday 62 degrees in the a.m. and the same time this morning it was 28 and flurrying when I went out to walk.
I want to take them to the metro parks but it’s looking like Ohio is on stay at home orders. I’m so glad for our 2 1/2 acres so they can have some fun.
Well I wonder if you can still go because when San Francisco was on stay at home orders, they were still allowed to go out and walk or job, but I’d check first. You are lucky to have a lot of area to roam and have fun.
