Broccoli & Cheese Stuffed Chicken Breast
A delicious chicken breast stuffed with broccoli and cheese, seasoned and browned in butter then baked in the oven for an amazing meal! This is a delicious way to impress your family or guests!
Ingredients
Place the chicken breast into a plastic bag
and gently pound to an even thickness.
Do not over pound or the chicken will
tear when you cut the pouch.
Using a sharp knife cut a pouch into the
breast from the thick end (not the side).
Place the cheese inside the pouch.
Push the cheese to one side
and add the broccoli.
Using toothpicks seal the end closed.
Sprinkle half of the seasonings
on the top of the chicken.
Place the butter into a skillet and
melt over medium heat.
Add the chicken seasoned side down.
Sprinkle the top side with
remaining seasonings.
Cook just until it turns brown then
turn immediately. You do not want
to cook it, just brown it. Turn chicken
over and brown other side.
Place the chicken into a baking dish
that is sprayed with cooking oil.
Carefully remove the toothpicks.
Bake in a preheated 400 degrees oven
for 35 – 45 minutes or until the center of
the chicken is 165 degrees. Do not over
cook or the chicken will be dry, so check
the temperature frequently.

- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 cup shredded cheddar cheese
- 1/4 cup broccoli florets
This is the ingredients for one large chicken breast. If you make more than one increase ingredients by that amount.
Directions
- Preheat oven to 400 degrees.
- Place the chicken into a plastic bag and gently pound to an even thickness. Do not pound too thin or it will be difficult to make a pouch.
- Using a sharp knife, cut a pouch into the chicken from the thick end (not the side).
- Place the cheese and broccoli into the pouch. Depending on the size of your chicken breast the amount may vary.
- Using toothpicks, seal the end of the chicken enclosing the broccoli & cheese.
- Sprinkle half of the seasonings (1/4 tsp each) on the top side of the chicken.
- In a skillet over medium heat, melt the butter. Add the chicken, seasoned side down.
- Sprinkle the top with the remaining seasonings.
- Cook just until brown then turn over and brown other side. Keep in mind you are not cooking the chicken, only browning it.
- Place the chicken into a baking dish that has been sprayed with cooking oil. Carefully remove the toothpicks.
- Bake for 35 – 45 minutes or until the center of the chicken breast is 165 degrees. Check the temperature frequently or chicken may be overcooked and dry.
- Place on a serving plate and enjoy!

FYI, for OCD compatibility, on the left handed chicken breast is it important to push the cheese to the right side and vise verse. Looks yummy though, if I could only find some meatless chicken…

You can do this!!!! Just buy rotisserie chicken and cooked shrimp so you only have to cook the pasta, throw it together and bake it. Have a great weekend Becky!
