Slow Cooker Loaded Potatoes
Slow Cooker Loaded Potatoes are loaded with cheese, bacon, green onion and seasonings. Top it off with sour cream for a delicious side dish or even as a meal.

Spray a slow cooker with cooking oil.
Slice small red potatoes in half
and larger ones into quarters.
Place half of the potatoes, skin
side down, into the slow cooker.
Sprinkle with half of the garlic, paprika, salt
and pepper. Then sprinkle with 1/3 of the
cheese, bacon and green onions. Repeat the
layer starting with the remaining potatoes.

Put the last 1/3 of cheese, bacon and
green onion into the refrigerator.
Put the lid on and cook on low for 4-5 hours
(2 & 1/2 hours on high)
or until the potatoes are soft.
Add the last 1/3 of cheese,
then bacon, then green onion.
Put the lid back on and cook on low
for 15 minutes or until the cheese is
melted and serve with sour cream.

Ingredients
- 1 pound small red potatoes
- 1 & 1/2 cups shredded cheddar cheese
- 1/2 tsp minced dried garlic
- 6 slices cooked and crumbled bacon
- 3 Tbsps. sliced green onions
- 1 Tbsp. paprika
- 1/2 tsp salt
- 1/4 tsp pepper
Directions
- Spray a slow cooker with cooking oil.
- Slice small red potatoes in half. (If potatoes are a larger size cut into quarters.)
- Place half of the cut potatoes, skin side down, into the slow cooker.
- Sprinkle potatoes with half of the garlic, paprika, salt and pepper.
- Sprinkle potatoes with 1/3 of the cheese, bacon and green onions.
- Repeat steps 3-5.
- Put the remaining 1/3 cheese, bacon and green onion into the refrigerator.
- Put the lid on the slow cooker and cook on low for 4-5 hours (or high for 2 & 1/2 hours) or until the potatoes are soft.
- Add the remaining cheese, then bacon and green onion.
- Put the lid back on and cook on low for 15 minutes or until the cheese is melted.
- Serve with sour cream.

Yes it gave it great color and also a bit different taste. The rest if the cheese, green onion and bacon cooked for hours. Then, for example, the green onion on top was a stronger onion flavor than the ones that cooked giving it that extra yum! Then I topped it with sour cream…..so good! Thank you for your nice comment!

I’m always shocked just how many things you can cook in the slow cooker – constantly amazed by it. I keep saying I’ll wait until I am retired and have more time for prep etc. and trying new things, then see your recipes. But finally, I am done with the big projects, still busy, but glad to not create any more work for myself for a while. We have a rainy/stormy weekend off and on, so I’ll stick close to home and do a few posts of some of the Summer pictures I was taking and didn’t get to use.
What a relief that must be! I’m so happy you are finally getting a break. I wish the weekend was going to be better. No grandkids and hubby works. I wanted to work outside pruning wisteria and weeding flower beds. I still haven’t redone the fish ponds either! Looking forward to the cooler temps in a week.
Yes it is Diane – it was crazy for about six weeks, almost two months. Too bad he’s not gone longer as he did leave work, but no more nights and hope that can continue. It rained and stormed when I first got up and I went back to bed and slept another four hours. I’ll go out now as the sun is shining, but storms off and on til Wednesday, most in the mornings. I’m looking forward to the cooler temps next Thursday – you’ll catch up outside then. I think I’m looking forward to Fall!
Haha you know me well! After working on the wisteria/arbor for 6 hours in the extreme heat Saturday, I was almost finished when I realized one of the main beams broke loose and dropped about a foot. It will be a lot of work to jack it up and reattach it. The arbor has been there since 1996 so I am thinking hard about whether I want to tear it down next year. It is so much work and I am trying to make my life easier…lol
After seeing your wisteria and the arbors, I certainly can’t blame you Diane and I will tell you that after the Polar Vortex in the Winter of 2014-2015 wiped out all my perennials, including my pride and joy butterfly garden, I never replanted … I was just disgusted and discouraged and did not want all the work either and I was younger. The following Winter we had a similar Winter. It’s a hard decision to make, I know unless you get someone in to help you out, not a Master gardener, but maybe just someone doing gardening for relaxation – perhaps trade that person’s labor for some of your great treats?

Correct no liquid, just make sure you spray the slow cooker well. Think of it as baking the potatoes and you know how must condensation the slow cookers can make.
