Easter Cake

This Easter Cake is a HUGE hit at our house for Easter. It is the easiest decorated cake I have ever made. You don’t even have to worry about what the frosting looks like because the frosting is almost entirely covered up. Use your favorite cake mix and your favorite frosting.

  3. Well I can identify – my mom made this for my neighbor Marge about 6-7 years ago … she just adored Peeps so she made it as a surprise for her. Good memories and such a festive cake.

    • I remember seeing this a few years ago and had to make it. I use to decorate cakes and sell them and this is the easiest decorated cake I have ever made! I think I would have gotten along very well with your mom!

      • My mom saw it too Diane – I think in Family Circle or Woman’s Day magazine … she said “we have to make this – my neighbor was crazy for Peeps”. I think you would have gotten along fine as well! When I worked on site, we had about 75 people and the staff was about 30 and every holiday my mom and I would make something small for each of the girls and I’d put it on their desk before most people got to work. For Easter, my mom had a Land O’ Lakes butter cookbook that she sent for free from a butter carton.       • Oh how funny Diane. We made them for the girls at work and they turned out so nicely … very festive looking. Yes, my mom had that little cookbook – probably is still in the drawer, but I knew the recipe was online. The Director of H.R. got one of the little treats each holiday (also she was my other boss at the time) … she e-mailed me after she left the Firm and wanted to make it for her Sunday School kids and asked if I could send it to her – took me half a second to find it online.

  4. I saw my first Easter cake of the year in my local supermarket today. Of course, it looked nowhere near as attractive as yours, but it did make me realize that Easter is closer than I realized.

  5. Beautiful and so festive! The green coconut reminds me of some Easter cakes my mother made when I was a child. Great memories!
