Apple Enchiladas
Wow this was just like eating a piece of apple pie! You can use any kind of fruit pie filling you want with this recipe, not just apple. Talk about easy and delicious, this is it! When you get ready to eat it, just pick one up and enjoy.

Ingredients – There is brown sugar
under the granulated sugar.
Lay the tortillas flat. Using a spoon
place the pie filling evenly down
the center of each tortilla keeping
it about 1” from the edge. Sprinkle
the apple filling with cinnamon.
Roll the apple filling inside the tortilla.
Spray a baking pan with cooking oil.
Lay the filled tortillas, seam
side down, into the pan.
In a small saucepan over
medium heat, melt the butter.
Add the water, brown sugar
and granulated sugar.
Stir to combine and bring
to a boil. Turn to a simmer
and simmer for 3 minutes
stirring constantly.
Pour the sauce over the filled tortillas.
If any part of the tortillas didn’t get coated,
use a spoon and pour the sauce over those spots.
Sprinkle the tops with cinnamon.
Let the tortillas rest for 30 minutes.
Preheat oven to 350 degrees.
Bake tortillas for 20 – 25 minutes or
until the edges start to brown.
Place them on a plate and serve.

Ingredients
- 1 (21 oz.) can apple pie filling or any other kind of pie filling
- 5 large or 8 medium soft flour tortillas
- 1 tsp cinnamon
- 1/3 cup butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, firmly packed
- 1/2 cup water
Directions
- Lay the tortillas flat. Use a spoon and spread the pie filling down the center of each tortilla keeping it 1″ away from the edge. Divide the filling evenly between all of the tortillas.
- Sprinkle the pie filling with cinnamon. Roll the tortilla over the pie filling rolling to the end.
- Spray a baking pan that is long enough to lay the tortillas in with cooking oil. Place the tortillas seam side down into the pan.
- In a small saucepan, melt the butter. Add the water, granulated sugar and brown sugar. Stir to combine.
- Bring to a boil. Reduce to a simmer and stirring constantly simmer for 3 minutes.
- Pour the sauce over the tortillas making sure the get completely coated with the sauce. If they don’t, use a spoon and pour the sauce over the uncovered spots.
- Sprinkle the tops with cinnamon and let the tortillas rest for 30 minutes.
- Have the oven preheated to 350 degrees by the time the tortillas have finished resting. Bake for 20-25 minutes or until the edges start to turn a light brown.
- Place on a serving plate and serve.

Does the tortilla flour or corn flavor mess with the apple flavor?
I wouldn’t want to use corn tortilla with this. The flour tortilla soaks up the sauce and it tastes like you are eating apple pie! I put the leftovers in the refrigerator and ate one cold today and I liked it even better. I tried putting ice cream on the hot ones but it made them too messy so I ate the ice cream on the side…lol

Absolutely it will work as long as it is really thick. I don’t bother because it is such small amount.

I think these could also be good with some sweetened cream cheese spread on the tortilla before adding the apples. Now I’m also wondering what other fillings could be worth experimenting with. You’ve set me on a dangerous path 😀
