Herbed Chicken & Potatoes
If you need an easy and quick Chicken & Potato recipe, this is it. Add a side vegetable and your meal is complete. Although I made this using Lipton Savory Herb and Garlic Soup Mix, you could use any of their dry soup mixes or make your own dry mix.

This is such a simple way to make a chicken meal that has so much flavor. I made this with boneless chicken breasts, however, the recipe calls for bone in chicken. If you use boneless chicken they will take less time baking than the 40 minutes stated in the recipe card below so keep an eye on the temperature of the chicken so you don’t over cook it..

Ingredients
Spray a 9” x 13” oven safe
dish with cooking spray.
Place the sliced potatoes in the pan.
Mix the water, oil and soup mix together.
Place the chicken on top of the
potatoes and pour the soup mixture
over the chicken and potatoes.
Bake, uncovered, in a preheated
425 degree oven for 40 minutes or
until the chicken is 165 degrees
and no longer pink inside.
Serve immediately.

- 3 medium all purpose potatoes, peeled & thinly sliced
- 4 bone in chicken breast halves (about 2 pounds)
- 1 envelope – Lipton Recipe Secrets – Savory Herb with Garlic Soup Mix (or your favorite)
- 1/3 cup water
- 1 Tbsp olive oil
Directions
- Preheat oven to 425 degrees.
- Spray a 9” x 13” oven safe pan with cooking spray.
- Place the potatoes in the pan spreading them out evenly.
- Lay the chicken on top of the potatoes.
- Whisk together the water, oil and soup mix. Pour it over the chicken and potatoes.
- Bake uncovered for 40 minutes or until the chicken is 165 degrees and no longer pink inside and the potatoes are tender.
- Remove to a serving plate and enjoy!
