Chicken Pasta Casserole
Chicken Pasta Casserole has a great combination of flavors. Top off the creamy, cheesy elbow macaroni with crushed Ritz Crackers and then even more cheese and you have one hearty, delicious meal! Although there is a bunch of small steps to make this, it really is easy to make…..and worth it! Both my grandchildren cleaned their bowls, my husband had seconds and my daughter took a bowl home for her dinner after a twelve hour work day! This recipe can be cut in half, but we needed the full recipe!

Ingredients
In a large pot, melt the butter and cook the diced onion.
Add the soup and cheese cooking and stirring until the cheese is melted.
Slowly stir in the milk stirring until creamy.
Add the chicken and pepper, stirring to combine.
Add the macaroni stirring well.
Pour into a four quart casserole dish.
Sprinkle with the crushed Ritz Crackers.
Bake, uncovered, in a preheated 350 degree oven for 40 minutes.
Sprinkle remaining cheese on top and place back into
the oven for about 5 minutes or until the cheese is melted.
Place in serving bowls and serve hot.

Ingredients
- 4 – 10.5 oz cans cream of chicken soup
- 4-6 cups cooked chicken cut into small cubes
- 1 medium onion, diced
- 1 stick butter
- 1 – 1/2 cups shredded cheddar cheese
- 7 cups cooked elbow macaroni
- 2 cups milk
- 1 tsp pepper
- 1/2 cup crushed Ritz Crackers
- 1/2 cup shredded cheddar cheese
Directions
- Preheat oven to 350 degrees.
- In a medium pot, melt butter and cook the diced onion.
- Add the soup and 1-1/2 cup of cheese, stirring until the cheese is melted.
- Slowly stir in the milk until creamy.
- Add the chicken and pepper, stirring to combine.
- Add the macaroni and stir.
- Pour into a four quart casserole dish.
- Sprinkle with the crushed Ritz Crackers.
- Bake, uncovered, for 40 minutes.
- Sprinkle the 1/2 cup of cheese over the crumbs and put back into the oven for five minutes or until the cheese is melted.
- Place in serving bowls and serve hot.
- Refrigerate leftovers.
