Jell-O Pineapple Rings
My Mom made these Jell-O Pineapple Rings when I was a kid. The flavor of the Jell-O sets into the pineapple rings making them absolutely delicious with a meal or as a snack! I use to love them and I decided to make them for my grandkids. These can be made with regular Jell-O or with sugar-free Jell-O. I always buy the pineapple rings that are in their own juice but you can use the syrup kind if you want to. They are easy to make and don’t take long for the Jell-O to set, however, they work best for me if I let them set for at least 6 hours. I used cherry Jell-O but you can use what ever flavor is your favorite.
Ingredients
Open one end of the pineapple can and discard the juice, leaving the pineapple intact.
Boil 1/2 cup of water and add the Jell-O to it stirring for two minutes.
Add 1/2 cup of cold water and stir.
Pour the Jell-O into the drained pineapple rings can.
Refrigerate until the Jell-O sets, about 6 hours.
Cut both ends of the can off but keep the lids attached to the Jell-O.
Push on the cut lid pushing the Jell-O Pineapple out of the can and onto a plate.
Using a thin sharp knife, slice the Jell-O between the pineapple slices and serve.

- Cut both ends of the can off but leave the lids attached to the Jell-O. Push the lid on one side, pushing the Jell-O Pineapple rings out of the can onto a plate.
- Using a thin sharp knife, slice the Jell-O between the pineapple rings.
- Place the rings on a plate and serve.

I can see this being served on iceberg lettuce with a dab of sweetened mayonnaise on top of it. Or maybe some sweeten cream cheese to make a really great salad.
