Lemon Garlic Parmesan Shrimp Linguine
This recipe is better than any restaurants! The shrimp cooked perfectly and the wonderful combination of flavors in it is amazing! All this heavenly goodness is made in just 30 minutes and in one pan which makes for easy clean up!

Ingredients
In a large pot over medium heat, boil water and add the linguine.
Boil until the linguine is tender, to your likeness.
Drain and set aside.
In the same pan, add olive oil and 2 Tbsp. of butter.
Add the garlic and red pepper flakes, cooking until fragrant.
Add the shrimp, salt and pepper stirring for about 2 minutes
or until the shrimp start to turn pink but are not fully cooked.
Add the oregano and spinach cooking until the spinach is wilted.
Melt the rest of the butter on the bottom of the pan and add the pasta,
Parmesan cheese and parsley tossing to coat everything.
Add the lemon juice and toss once again.
Put it on a plate and serve.

Ingredients
- 8 oz linguine noodles
- 2 Tbsp. olive oil
- 2 Tbsp. butter
- 2 cloves garlic, minced
- 2 tsp red pepper flakes
- 1# raw large shrimp, (peeled-deveined-no shell or tail)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp dried oregano
- 4 cups fresh baby spinach
- 4 Tbsp. butter
- 1/4 cup grated parmesan cheese
- 2 Tbsp. dried parsley
- 1 Tbsp. lemon juice
Directions
- In a large pot over medium heat, boil water and cook linguine to your desired doneness. Drain and set aside.
- In the same pan, add the 2 Tbsp. of butter and the olive oil.
- Add the garlic and red pepper flakes cooking until fragrant.
- Add the shrimp, salt and pepper stirring for about 2 minutes or just until the shrimp start to turn pink but are not fully cooked through.
- Add the oregano and spinach cooking until the spinach is wilted.
- Melt the rest of the butter in the bottom of the pan and add the pasta, parmesan cheese and parsley.
- Toss to coat the pasta well.
- Add the lemon juice and toss again.
- Put on plates and serve.

Hi Diane. I will definitely be making this dish. Parmesan is the only cheese that my son and I can eat (in moderation) with our lactose intolerance and we both love shrimp.
