Cornish Game Hen
Who doesn’t like these dainty little Cornish Game Hen? I remember my Mom making these when I was growing up. She bought two Cornish Game Hen for the four of us. She took a knife and sliced the hens in half which I thought was cool because it looked like I was eating half of a chicken. I have continued to make these ever since I left their home.
Ingredients
Melt the butter and add all of the other spices to the butter, stir and set side.
Rinse the Cornish game hen and pat dry with paper towel.
Using a pastry brush, brush the butter mixture all over each hen on the front and back.
Place the hens, breast side down, side by side in a 2 quart casserole dish without a lid.
Bake in a preheated 350 degree oven for 60 minutes or until a thermometer pushed in the thickest part of the hen reads 165 degrees.

You too!
Looks really tasty and succulent.
Thanks!
This post really brought back memories. I use to roast these tiny hens, as a treat, many moons ago. You’ve inspired me to make the tasty delights again after all these years. 🙂
Awe I’m so glad! These have many memories from my childhood as well. Have a great day Olga!
Fascinating – I’m Cornish, and I’ve never heard of a Cornish Game Hen. We don’t have them over here.
How funny! They taste just like chicken.
If you want to try a proper Cornish dish try cooking a Cornish Pasty.
