Orange Chicken Over Rice

Terry, my wonderful husband, wanted to surprise me with a dish he has never made before. It was very easy and quick to make. Since he does the grocery shopping (lucky me) he bought frozen chicken pieces that were already cooked and breaded along with frozen stir fry veggies. He found the bottle of Orange Sauce in the Asian food aisle. Sounds pretty easy doesn’t it? If you like the taste of Orange Sauce (it’s sweet and reminds me of Duck Sauce), you will love this recipe. I know I did and not just because I had the night off from cooking!

Orange Chicken Over Rice

24 oz. bag of frozen boneless and breaded chicken pieces

2 – 12 oz bags of frozen stir fry vegetables, thawed

1 – 1/2 cup Jasmine rice

1 can mandarin oranges

3 TBS sesame oil

16 oz. orange sauce

Bake chicken per directions on the package. Prepare Jasmine rice per package directions. In Wok or deep pan, add sesame oil and heat over medium high heat until hot. Add vegetables, mandarin oranges and cook until hot. Add chicken and orange sauce. Gently mix coating all of the ingredients and serve over the rice.
