Slow Cooker Vegetable Soup
Whenever it is time to use up my fresh vegetables so I can buy new ones, I make soup! It is not entirely made with vegetables because whenever I make vegetable soup I always add barley, however, you can leave it out if you want to. This is so simple to put together, throw it into the slow cooker and you are done!
Ingredients
Place the cut up carrots, onion, celery
and cabbage into a large slow cooker.
Add the seasonings and the barley.
Pour in the crushed tomatoes.
Pour in the beef broth and stir well.
Cover and cook on low for at least 7 hours.
Add the frozen mixed vegetables.
Stir, making sure the frozen
vegetables are under the liquid.
If there is not enough broth for
your liking, add more beef broth.
Cook another 1-3 hours on low or
until all of the vegetables are tender.
Place in serving size bowls and enjoy.

Ingredients
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
- 1/2 tsp Italian seasonings
- 2 Tbsp parsley
- 1/2 cup uncooked barley
- 3 stalks celery
- 1 large onion
- 3 carrots
- 16-24 oz. frozen mixed vegetables
- 1 small head cabbage
- 28 oz. crushed tomatoes
- 64 oz. beef broth
Directions
- Peel carrots and slice into 1/2″ pieces.
- Slice celery into 1/2″ pieces.
- Peel and dice the onion.
- Chop the cabbage into 1″ squares.
- Place all of the cut up vegetables into a large slow cooker.
- Add the seasonings and the barley.
- Pour the crushed tomatoes on top.
- Pour the beef broth over the top and stir well to combine. Make sure the vegetables are all under the broth and put the lid on.
- Cook on low for 7 hours.
- Add the frozen vegetables, and stir, making sure the vegetables are all under the broth.
- Cook for another 1-3 hours or until all of the vegetables are tender.
- Place in serving bowls and enjoy.

I think we’re past the worst of it. Roads are getting cleared and while they’re predicting more snow today, it won’t be nearly as heavy as it was last night. Luckily I was able to leave work early and get home before it started.
That’s good! That feeling of being home safe is so nice! Stay warm.
I wonder if that could be made in an Instant Pot.
I have my new, unopened Instant Pot sitting right next to my chair. So for now, I can’t answer that. I am hoping to check it out this weekend. I am sure I will be posting recipes as I figure this thing out…lol
I love my Instant Pot but have not mastered recipes except for one soup my Jewish friend taught me.

I often forget to do this. I forget that I don’t have to rush to use my fresh veggies and I don’t have to have to have them twice in a week. I could just make a soup! I am going to make this soup this week. In fact, this one.

It is definitely a healthy soup. When I need to take off a few pounds I make this and eat a huge bowl to replace at least one meal a day. I call it my diet soup…lol

We miss almost all of it….thank God. Maybe an inch or two at most. My husband had to use the shovel because there wasn’t enough to use the snow blower. Did you get any? I thought it was just south of us???
South of me did in Monroe, close to the state line, but not a flake for us – I was ecstatic! They are talking now about next Saturdy with potential now. Fingers crossed it doesn’t happen!

Barley in soup is a great idea! If I didnt need to eat gluten free, I’d eat cooked with my rice.
I have never cooked rice in a slow cooker. I am afraid it would get too mushy. Have you?
I shoulda mentioned in a regular rice cooker, slow cooker. But Asians actually like their rice a bit stickier texture, that we often add glutinous sweet rice with the regular white rice. 🌾
Oh my kind of rice! I could never figure out why anyone likes rice that is crunchy too. I love it cooked completely through and sticky!
