Rosemary & Wine Vinegar Vegetables
If you want a simple and delicious side dish for four people, give this a try. The vegetables are steamed and the rosemary & wine butter sauce is drizzled over the top just before serving. This is a colorful recipe that combines three great vegetables in one dish.
Ingredients
In a steamer over high heat, place about 1”
of water in the bottom pan. In the Steamer
basket, place the broccoli and then the
onion slices on top. Cover and bring to a boil
and cook for about 8 minutes or until the
broccoli is a crisp tender. Add more water
to the pan if necessary while steaming.
Place the peppers on top and continue
to steam with the lid, briefly, until the
peppers turn a bright red but still hold
their shape. Remove from the
heat and place in a bowl keeping warm.
In a small microwave safe dish melt
the butter in the microwave.
Add the vinegar and rosemary.
Stir to combine.
Drizzle the butter evenly over the
vegetables and serve immediately.

- 1 bunch broccoli florets (about 12 oz)
- 1 large red bell pepper slices (seeds and top remove)
- 4 (1/4” thick) slices of onion rings
- 4 Tbsp butter
- 1 tsp wine vinegar
- 1 tsp dried rosemary
Directions

- Remove the lid and place the peppers on top of the broccoli and onions rings. Replace the lid and continue to steam, briefly, until the peppers are a bright red but still hold their shape.
- Remove from the heat and place the vegetables in a bowl. Cover to keep warm.
- In a small microwave safe dish, melt the butter in the microwave. Add the vinegar and the rosemary. Stir to combine.
- Drizzle over the vegetables and serve immediately.
