Amish Mandarin Orange Cake
Have you ever heard of such a thing as Mandarin Orange Cake? I never have so of course I had to try it. I found this recipe in “Amish Family Favorites” cookbook and the recipe was by Mrs. David Ray Yoder. The recipe was very vague so I wasn’t sure if it would turn out but it did. I rewrote the recipe so you could understand it. After some research about this cake I saw where it was common to frost it with a Whipped Pineapple Frosting. Mrs. Yoder didn’t use this frosting, she just put a dollop of fresh whipped cream on hers. You can make yours either way you would like.
Below is the link to the Whipped Pineapple Frosting:

Ingredients
Whisk the flour, baking soda
and salt together.
In a medium bowl add the eggs, sugar and
entire can of mandarin oranges, liquid too.
Using a mixer, blend on low speed until combined
and mandarin oranges are no longer in segments.
Add flour mixture.
Using a mixer, mix well for about
2 minutes on medium speed.
Grease and flour a 9” x 13” cake pan.
Pour cake batter into the pan.
I greased my pan using my homemade

I never heard of this kind of cake but it looks very good, Diane. Is it as zesty like a lemon cake?
No it really isn’t that zesty. You can taste the orange but the pineapple frosting with the orange is a great combination! The cake is like a sponge cake.
Looks absolutely delicious! Just cant wait to try this.
Thanks so much!
I’d eat it with my hands lol!!!!
You could! It’s like a sponge cake and holds it shape perfectly!
Excellent!
