No Bake Granola Bars
I have never had homemade Granola Bars before making these. I always thought the store bought were so good, wow was I mistaken! I am shocked at how wonderful these were compared to store bought. I will never buy another box of Granola Bars from the store again. I put a lot of goodies in my Granola Bars…… chocolate chips, peanuts, dried cranberries, raisins, oatmeal, coconut and Rice Krispies. Then there is the peanut butter, honey….etc. Of course you can add whatever you want to your own recipe. Check out my recipe below because this was a wonderful combination of flavor!

Ingredients
Butter a 9” x 13” pan.
Sprinkle the chocolate chips evenly
on the bottom of the pan.
In a large bowl place the oats, coconut,
peanuts, dried cranberries, raisins and
Rice Krispies.
Mix together with your hands.
In a medium saucepan over medium low
heat mix brown sugar, honey and salt.
Stir until combined and continue to stir
until it boils and you cannot stir away
the bubbles. Boil for 1 minute.
Remove from the heat and stir in
the peanut butter and vanilla extract.
Stir until smooth and creamy.
Add the peanut butter mixture to the dry mix
and toss until all of the dry mix is coated. Once
it was cool enough for me to touch, I finished
this by hand because it was easier than a spoon.
Pour the granola mix into the pan. Use a
spatula and press firmly all over the granola.
If you do not press hard enough the granola
will fall apart when you go to pick them up.
Let cool then cut into bars.
Wrap in plastic wrap, store in sandwich
bags or an air tight container.
No Bake Granola Bars

Ingredients
- 1/2 cup honey
- 1/2 cup brown sugar, firmly packed
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
- 1/2 cup sweetened shredded coconut
- 2-1/2 cups Rice Krispies
- 1/2 cup chopped peanuts
- 1/2 cup dried cranberries
- 1/2 cup raisins
- 2 cups quick cooking oats
- 2/3 cup peanut butter
Directions
- Butter a 9” x 13” pan. Sprinkle the chocolate chips evenly on the bottom.
- In a large bowl combine the coconut, Rice Krispies, peanuts, cranberries, raisins and oats.
- In a medium saucepan over medium low heat mix the brown sugar, salt and honey. Stirring constantly bring to a boil. Boil for 1 minute.
- Remove the pan from the heat and add the vanilla and peanut butter.
- Stir until smooth and creamy.
- Pour the peanut butter mixture on top of the dry ingredients and toss with a spoon. Once the mixture was cool enough to touch I finished this using my hands until all of the dry mixture is coated.
- Pour the granola mixture into the pan. Using a spatula press hard on the mixture. If you do not pack it tight enough the granola will fall apart when you go to eat it.
- Let cool, cut into bars and store in individual plastic wrap, sandwich bags or an air tight container.

These look really good! I’ve been making granola for years, but never tried to make portable bars. I just keep it in a container for sprinkling on things – cooked cereal, mostly. Does the peanut butter get runny when the weather is warm? We live in Arizona – it is warm here a lot! ;->

This was the first time making them. I left them on the counter over night and they did not get runny but it is 70 degrees in my house. However, since I am the only one eating them I did put them in the refrigerator thinking they will stay fresh longer. I certainly didn’t need to because they are disappearing so fast…lol

I have not had any sweets since 2011, but sometimes I crave something and I thought if I could control what goes in it, that would be good. I used to like the Nature Valley Granola Bars and had them for years (the crunchy variety) and they were getting too hard and after I got my crown back in 2002, I decided to give up on eating anything hard as I didn’t want to damage it. The chewy ones in the store are sometimes really sweet. I will let you know … I ran to the store for a few things yesterday, but don’t have all those ingredients on hand. Then I will try them. P.S. Putting them in the fridge – good idea as they are not as handy, I would have to triple-bag them or put them in the freezer to deter eating them all up!
Nature Valley was my favorite as well! Same reason I stopped eating them was they are so hard. These are nice an chewy but if you haven’t had sweets leave out the chocolate chips.
I ate them for years … always carried them around me when I was in school for between classes. I think they changed the formula or something as I never worried about breaking a tooth on them before. OK, I will remember that Diane … I gave up sweets in 2011, so I am reluctant to even try it as then I might crave them again, but sometimes a little sweet might be nice.

Robin I seriously couldn’t believe how much better these are than the store bought. The chocolate chips added just enough sweetness to take care of my sweet cravings! Not that I ever have sweet cravings…hahahaha

These look so good. Do you think substituting agave for honey would be ok? I’d like to make these!
I personally have never used Agave. Agave has more water content than honey and is sweeter than honey so I’m not sure how it would work. There certainly is not a reason you couldn’t try through.

I’ve filed this recipe away for a time when I have enough people over to share them with. Otherwise I’d be to tempted to eat the lot! They look delicious.

We eat a lot of granola bars. We take them on hikes and long car drives. I will definitely try these. I might have missed this info but do they need to be kept refrigerated? And how long will they last?
I wrap mine individually in plastic wrap and then store in an airtight container.

I ate these all myself!!! Your grandkids will love them. Make sure you push hard to pack them down so they create the bar. I used a spatula and pressed hard and long and they turned out great.
