Cucumbers with Sour Cream
Our garden cucumbers are almost done so I needed to try one last cucumber recipe. This recipe has a delicious creamy taste with only 5 ingredients. I love sour cream but I have never mixed it with cucumbers (we always use Miracle Whip). This doesn’t take long to make and it is a great side dish for family or guests.
Ingredients
Lay the cucumbers flat and salt them to taste. Let them stand for one hour.
Place the cucumbers into a large bowl.
In a small bowl mix the sour cream, lemon juice and pepper.
Pour the sour cream mixture over the cucumbers and
mix until the cucumbers are completely coated.
Refrigerate until cold and serve.

- 1/2 cup sour cream
- 2 tsp lemon juice

Hi Diane. I love sour cream also and cucumbers. Just wondering why one has to let the salted cucumber sit for an hour. 🙂
I do this to help the salt penetrate the cucumbers instead of getting lost in the sour cream. Just a personal preference. Have a great weekend Olga!

How will you remember all the cucumber recipes you have for next year’s crop Diane?
They are all on my website AND I print off every recipe so my kids have them when I’m gone. Yes every one…..lol I have binders divided by category for them. They don’t know I am doing this. I always feel sad when people say my mom use to make this and that and the recipe died with her. Food brings back so many wonderful memories for people.
That is really good of you to do that so they can recreate your dishes. My mom had a binder of favorites for all categories, but hand-written out. I don’t cook or bake, but I will keep the binder just in case I get more time once I am retired to make some of our favorites.
I bet you have some amazing recipes in that binder! You are so lucky and to see her handwriting must feel great!
I should look in there sometimes and see if there is something I can “handle” … all the tried and true favorites.

That is true Diane. She wrote out everything on loose-leaf sheets of paper and got separators for it so it is well organized – she obviously thought I would be preparing more than I really do. 🙂

I make cream cheese and Tuna with finely sliced cucumber and then add the juice of a lime.Crack black pepper over it mix and serve as side dish. The amount of black pepper corns will depend on your taste. Delicious I think as it was invented by necessity one night long ago when the electricity failed and guests arrived at dinner. I made this fast to occupy them whilst lighting the wood burning oven to cook on top six steaks. We had a great night with fine food and company and candles all night even though power came back half way through serving. I used all I could find and my sister told me it was funny concoction until she tried it. fish with cheese and lime juice would not be favoured but I did not tell them and it was all gone by the time I cooked the meat. My sister winked .later all the ladies left the men and asked me what it was. I asked first did they like it. You bet they did. I call it now “power mad delicious “and all know what it is.
Hahahaha what a wonderful story and I love the name! I love cream cheese anything and have always made tuna salad with Miracle Whip salad dressing so I would definitely love it made your way especially under candlelight!
