Okra with Tomatoes
More garden goodness! We had so many Okra and Cherry Tomatoes that I looked for a recipe to use them both up. I always make my Okra in the oven or breaded and fried but I wanted to try something new. On http://www.FoodNetwork.com I found this fabulous recipe! It was so easy and quick to make and what a great taste with no slime! This is a must try recipe if you love Okra like I do. Even my husband loved it and he said he doesn’t like Okra…..until today!
Ingredients
In a large frying pan over medium heat, add the oil and cook until hot.
Add the smashed garlic, cooking until golden brown.
Add the okra and onion.
Salt and pepper to your own taste.
Cook until the okra is tender about 10-12 minutes
stirring occasionally but carefully.
Add cherry tomatoes.
Cook just until the tomatoes burst, about 3 more minutes.
Add a splash of vinegar, gently toss and serve.

- 4 cups okra, clean with the ends cut off and sliced in half lengthwise
- 1 small onion, peeled and cut into wedges

- 1 pint cherry tomatoes, clean and cut in half
- splash of cider vinegar

We have loads of okra b/c it’s one of the few crops that take our intense summer heat in TX, but we usually end up feeding it to the pigs! I’ll definitely try this recipe, but what is the key to ‘no slime’ okra, do you know? I heard before the trick is to not cook it too long, but in this recipe it’s getting well-cooked looks like. Thanks for the inspiration and any thoughts.
With this recipe you cut the okra in half lengthwise and there wasn’t a bit of slime! Adding the splash of vinegar really made this good! I always cook mine longer to get rid of the slime no matter what way I cook them. I absolutely can not eat it slimy and I LOVE okra! Give this a try and you will have to give the pigs something else!
