Beef Barley Soup
Beef Barley Soup is another creation from my husband, thank you sweetie! It turned out delicious and I love barley! I just had surgery and he has offered to help me keep by blog going. So if I sound a little bit loopy this week, it’s the pain pills.
Ingredients
Place ground beef into a large pan over medium heat. Add chopped veggies and cook until meat is cooked through with no pink remaining and veggies are tender.
Add the rest of the ingredients then stir.
Bring to a boil and turn to a simmer.
Simmer for 30 minutes then serve.

Ingredients
1# ground beef
1 medium onion, diced
2 carrots, peeled and sliced
2 celery, washed and sliced
1 tsp dried minced garlic
1 – 14.5 oz can of diced tomatoes
3/4 cup uncooked barley
32 oz beef broth
32 oz water
1 – 7 oz can stems and pieces of mushrooms, drained
1 tsp salt (or to taste)
Directions
In a large fry pan, cook ground beef and raw veggies until ground beef is no longer pink and veggies are tender.
Add water, beef broth and the rest of the ingredients.
Bring to a boil over medium heat.
Turn to a simmer.
Simmer for 30 minutes and serve.
