Slow Cooker Chicken & Dumplings
Fixing Chicken & Dumplings in the slow cooker is another easy and delicious meal. Dumplings can be made homemade or you can buy a can of home-style biscuits from the store and cut each biscuit into four pieces. This way is very easy and they turn out like dumplings, not biscuits. There are many different types of dumplings so pick your favorite as they all work. This is one of those recipes that tastes even better the next day! I always say I will make my meal the night before but I never do.
Slow Cooker Chicken & Dumplings

Ingredients
6 chicken breasts
1 medium onion, chopped
2 celery stalks, diced
1 can cream of chicken soup
1 tsp pepper
2 bay leaves
3 (14.5 oz.) cans chicken broth
1 – 12 oz. bag frozen peas & carrots, thawed
Homemade Dumplings
2 cups flour
1 tsp salt
4 TBS butter
1/2 cup water
Directions
Put chicken into the slow cooker. Add onions, celery, soup, pepper, bay leaves and chicken broth. Set on low for 5 hours. Remove chicken, shred with two forks and return to the slow cooker. Turn to high and add peas & carrots. Add dumplings, recipe below.
If using canned home-style biscuits: Cut each biscuit into four pieces. Drop into slow cooker trying not to let biscuits touch. Cook 1/2 hour then turn them over. Continue cooking another half hour or more until the dumplings are done.
Directions for homemade dumplings: In a medium bowl combine flour and salt. Using a pastry blender, cut in the butter until small crumbles appear. Add the water and combine using a fork, forming a dough ball. Using a rolling pin roll dough on a floured surface and cut into serving size pieces, any shape will do. Drop into slow cooker trying not to let the dumplings touch. After 1/2 hour turn them over. Continue cooking until dumplings are done, another 1/2 – 1 hour. http://www.InDianesKitchen.com

Shouldn’t there be some baking soda or baking powder and these dumplings?
Hi Jewel! No they don’t, these dumplings don’t get puffy like regular dumplings. They are a very thin dumpling. Thank you for asking!
