Baked Chicken Normandy My Way

I always wondered why we layer food in a casserole dish. After all, I know when I take a bite, it is of all those layers and tastes the same as if the casserole had been mixed all together before cooking, right? Well guess what? I did exactly that, no layering in this recipe and was it delicious!

Spray a 9” x 13” oven safe dish with cooking oil.

In a large bowl add the box of stuffing, melted butter and chicken broth. Toss to combine and set aside until all of the liquid is absorbed.

In another large bowl add the onion, celery, chicken, mayonnaise, cream of mushroom soup, salt and pepper. Toss well to combine.

Add the soup mixture to the stuffing bowl and toss to combine.

Pour the mixture into the prepared dish.

In a bowl whisk together eggs with the milk.

Pour the milk mixture over the stuffing mixture.

Bake uncovered at 325º for 45 minutes.

Sprinkle with as much cheese as you want. Return casserole to the oven and bake 10 minutes more.

Turn off the oven and turn on the broiler. Broil, watching carefully, until the cheese is a golden brown.

Then serve!

- 1- 6 oz box of Stove Top stuffing, uncooked

- 1/2 cup mayonnaise
- 1/2 tsp salt, or to taste

- 3 cups cooked chicken, chopped small
- 2 large eggs
- 1½ cups milk
- 1 cup grated cheddar cheese (or to taste)
Directions

That worked very well with good texture

I don’t know why but I do love Stuffing mix. When I make a turkey, I usually don’t eat the turkey but I love the stuffing !
I’m with you Susan. I get such a craving for stuffing that I will make a batch just for me. I love homemade stuffing cold the next day or two. Then there is Stove Top Stuffing, that is another kind of deliciousness!

I like easy, one dish recipes. I am cooking a turkey, so will try that instead of the chicken with the leftovers. It sounds yummy.
Oh yes turkey will work just fine. My husband finished up the leftovers today and he said it was as delicious today as it was yesterday.
