Rhubarb Cake
This is one of the moistest cakes I have ever made. I received this recipe from my mom years ago. I have been making it since the 1970’s and it’s still one of my favorites. I grow my own rhubarb and freeze it so I can enjoy it in my recipes all year long. This is a great cake for anyone that doesn’t like extremely sweet cakes smothered in frosting. Just a dusting of powdered sugar is all that is needed for this cake. You bite into the cinnamon flavored cake and then get that tart little bite of rhubarb……so good!

Rhubarb cake – oh my goodness. I’ll have to try this. I remember as a kid just grabbing a stalk of Rhubarb and eating it with maybe a little sugar but I loved it. Yum. Thanks for putting this one out there. Thanks

We had the worst stormy day here Diane … we are in our second storm of the day with severe weather at around midnight. I lost my power for 3 1/2 hours from mid-afternoon to almost 7:00 p.m. I would like to return to the “good old days” weather .
I saw it on the radar heading your way! We are still getting thunder and lightening and it’s midnight. We lucked out and didn’t get hail or lose our power. I hope you didn’t lose anything in you refrigerator & freezer!
Well I had no power for 3 1/2 hours. I think the freezer was fine. I had some lunch meat left and just used it up and had another sandwich rather than let it go bad. They said power would be restored in 3 hours but it was a big storm. I think the dairy stuff in the fridge is okay (yogurt, cream cheese and cheese slices) … I normally don’t trust it, but I think this time 3 1/2 hours is okay. If you don’t hear from me after I eat the dairy products, you’ll know it wasn’t okay. 🙂 I have lost alot of food the last few years from longer power outages and don’t take chances. I normally don’t have much in the fridge/freezer in the Summer months during the hot days where we get volatile storms.
Living in the country we never know if the power will go out so we invested in a generator. It will run the sump, TV, light and we switch the cord for our refrigerator and large freezer. Such a great piece of mind!
My friend who lives in NY has the worst Winter storms … she is in the snow belt and her power is always going out, so she got an instant-on generator for that very reason. It is a great peace of mind. Plus you likely have a full freezer at any given time as well. You told us you freeze a lot of your fruits from the Summer (maybe veggies as well).
Oh yes the freezer is packed to the top! We also get a side of beef every year so that’s in there too.
Oh definitely you need to have a generator then – you’d have a lot of food wasted without it!
Oh yum! This sounds phenomenal. Usually I stay away from cakes because they do have a tendency to dry out, but if this is moist I will have to try it out ! I loveee Rhubarb anything too. Thanks for sharing, Diane!

What is shortening?
It is similar to lard. Crisco is a brand of shortening produced by The J.M. Smucker Company popular in the United States.
