Oil Free Tomato Onion Salad

Since it is the end of the garden season, I decided to make my husband this delicious Oil Free Tomato and Onion Salad. This was so full of flavor with fresh basil, garlic, onion, oregano and a red wine vinegar marinade that it didn’t need any oil.

In a medium bowl add the onion, basil, garlic, salt, pepper and oregano. Toss to combine.

Add the water and red wine vinegar then toss well.

Add the tomatoes.

Toss well then refrigerate for at least 3 hours then serve.

Ingredients

  • 2 pounds fresh Italian tomatoes, cut into bite sized pieces
  • 1 medium red onion sliced thinly (or your favorite onion)
  • fresh basil large handful, then chopped
  • 2 cloves garlic minced
  • 1/3 cup red wine vinegar
  • 1/4 cup water
  • 1 1/2 teaspoons salt, or to taste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper

Directions

  2. Add the water and red wine vinegar then toss well.

  3. Add the tomatoes.

  4. Toss well then refrigerate for at least 3 hours then serve.

  1. Tomatoes and onions are good for you as they have a lot of Vitamin C, important during cold and flu season (especially since I heard today that this year’s flu shot is only 35% effective). Sigh.

    • With all the tomatoes we got from the garden we should be healthy for a year. At the end we actually were tired of eating them, we had so many! It was a good year in the garden. I don’t think they ever get the right flu, however, I will take 35% over not at all.

      • Good job eating all the natural Vitamin C. By next Summer, you will be hankering for a ripe, fresh-from-the-garden-and-still-warm-from-the-sun tomato once again. I don’t think they get it right either as to the vaccine. Me too, we’ll fight these viruses with whatever weapons they give us to stay healthy.

  2. My mum also makes her tomato salad like you do — maybe not with the exact spices, but almost. I’m going to send her your recipe, she’ll probably make it for her every day.

    • I thought next time I would add cucumbers too. I hope she enjoys the recipe, my husband did. What’s funny about this recipe is I wanted to use the red onion. My husband said he would go to the store and buy one. He came back with a seafood salad for me and ground bologna for himself, yep no onion. Lol
