It’s Friday What’s For Dinner 12-09-22

Anyone that makes a homemade dinner is welcome to type the name of one recipe that you prepared in the comments, then we can all scroll through the comments for recipe ideas.This will be a weekly Friday post and only recipes on the Friday posts will be allowed. 

If someone wants your recipe and asks there will be no pressure to share it, it’s up to you. I will accept links, but only to the recipe and NO VIDEO. It may take me a day to approve it so I can make sure the link is legitimate and not spam.

I find the hardest part of making dinner isn’t the process, but figuring out what to make. So go ahead and post ONE RECIPE ONLY EACH FRIDAY in the comments or feel free to just read what others have made. Either way, I hope we all get some great ideas to make our meal planning easier.

  1. It’s been years, but I’ve rediscovered scalloped potatoes the last couple weeks. Yet to do the cheesy version. Yours looks like perfection!

  2. Ok, my wife needed to take some cookies into work for Christmas cookie week and I was all set to bake your chocolate butterball cookies when you posted about the secret kiss cookies. They turned out pretty good. Thank you.

  3. Sorry I got to this so late.
    SUPREME SAUSAGE AND PEPPERS

    A great weeknight diversion from the ordinary
    1 lb GOOD italian sausage
    1 large fresh onion
    3-4 bell peppers, I prefer red or orange
    EVOO
    Splash of red wine
    Parmesan or Romano cheese, Parm is really preferable but a mix is best
    1 can tomato sauce
    Preheat oven to 400 degrees
    Slice the sausage in half and place in a roasting pan lined with EVOO
    Slice the peppers into wedges removing all the seeds
    Slice the onion the same way
    Season with salt, pepper to taste and generously sprinkle garlic powder
    (remember, there is no such thing as too much garlic)
    Sprinkle cheese over the top and add wine
    Cover with foil, lower the temp to 375 and bake for 1 hour
    After one hour, uncover and toss a little, adding tomato sauce
    Bake at 350 degrees for about ½ hour or until sausage starts to brown.
    Serve with good, crusty Italian bread and enjoy. Don’t forget the wine!

  5. I had smokey bacon macaroni and cheese. I make a roux, but add smoked cheddar cheese to the sauce (I use a lot). I boiled 4 eggs and cooked about half a pound of bacon. I chopped the bacon and added that to the macaroni and cheese mixture. I put half in a casserole dish, then added a layer of egg slices and topped with the rest of the macaroni and cheese. I crumbled corn flakes on top and baked in the over at 350 for half an hour. I served it with a caesar salad. It was so yummy.

  6. These look so good Diane – I love anything cheesy and It’s been years since I had scalloped potatoes. My mom used to slice smoked sausage or kielbasa and bake it with the scalloped potatoes.

      • Now I’ll be salivating over that dish Diane. My mom used to make all those dishes in the toaster oven in later years, her quiche, meat pies. I need to have an electrician in to check the plugs as my mom used an extension cord and it got too hot. All the toaster ovens had short cords and the only other plug is under the cabinets and my mom worried they would peel or buckle so she couldn’t plug it in there. We had the cupboards “faced” with oak finish as they were just plain brown.

      • No way, I can’t believe she used an extension cord! I hope you can get something working for you someday. But then again, it must be working for you now and as long as you get enough to eat and you’re happy that’s all that matters.

      • Yes, it was a heavy-duty, two or three-foot extension cord. That cord was fine, but the toaster oven cord was hot. She knew about it – nowhere else to plug it. I’ve not used it since. Yes, it works for me now but they are are not great meals except what is hot from the crockpot -the leftovers I just have cold. I want an electrician to look at it … not sure if I want a toaster oven or microwave and just keep the oven for show but use the cooktop … Windows 10 laptop is still on it (don’t laugh, it’s true … maybe in 2023 I’ll use it).
