Creamy Italian Tortellini Soup

A hearty soup with tortellini, sausage, carrots, tomatoes, spinach, seasonings and cream which makes a delicious broth and even better soup. I told my husband I hoped he didn’t like this so I could have it all, but that didn’t happen.

In a large skillet over medium heat, cook

the sausage until thoroughly cooked and

crumbly. Remove the sausage from the

skillet (keeping the grease in the skillet).

Place the sausage on a plate or

in a bowl and set aside.

Add the carrots and onion to the skillet

with the leftover grease. If there isn’t

enough grease to cook the vegetables,

add 1 Tbsp. of olive oil. Stir frequently

and cook until tender. Add the

garlic and cook another 1-2 minutes.

Add the cooked sausage, beef broth,

tomatoes, tomato sauce, basil, oregano,

parsley, and spinach. Bring to a boil,

turn to a simmer and simmer

for 20 minutes covered.

Add the tortellini, cover and

simmer for 7 more minutes.

Stir in the heavy cream then serve

topped with cheese if you wish.

Ingredients

  • 1# hot Italian sausage (mild can be used instead)
  • 20 oz. cheese tortellini, uncooked
  • 1 cup peeled & diced carrots
  • 2 cloves garlic, diced
  • 1 medium onion, diced
  • 7½ cups beef broth
  • 1 – 14.5 oz. can diced tomatoes
  • 8 oz. tomato sauce
  • 1/2 Tbsp. packed fresh basil (or 1/2 tsp. dried)
  • 1 tsp. packed fresh oregano (or 1/4 tsp. dried)
  • 3 Tbsp. packed freshly chopped parsley (or 1 Tbsp. dried)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • grated parmesan cheese, for garnish (optional)

Directions

  1. In a large skillet over medium heat, cook the sausage until thoroughly cooked and crumbly. Remove the sausage with a slotted spoon to a plate or bowl, keeping the grease in the skillet.
  2. Add the carrots and onion to the skillet, cooking until tender. If there isn’t enough grease to cook them, add 1 Tbsp. of olive oil. Once tender add the garlic and cook another 1-2 minutes.
  3. Return the sausage to the skillet and add the beef broth, tomatoes, tomato sauce, basil, oregano, parsley and spinach. Bring to a boil, turn to a simmer and cover, simmer for 20 minutes.
  4. Add the tortellini, cover and simmer for 7 minutes.
  5. Remove from the heat and stir in the cream.
  6. Ladle into serving bowls and top with cheese, optional.

  1. This looks so good Diane. I just saw the boxes of tortellini when I was buying my Winter pantry stuff. Tempted to buy it but passed and will drool over yours instead. I liked your sentence: “I told my husband I hoped he didn’t like this so I could have it all, but that didn’t happen.” 🙂
