It’s Friday What’s For Dinner 9-2-22

Anyone that makes a homemade dinner is welcome to type one recipe you prepared in the comments, then we can all scroll through the comments for recipe ideas. This will be a weekly Friday post and only recipes on the Friday posts will be allowed.

If someone wants your recipe and asks there will be no pressure to share it, it’s up to you. I will accept links, but only to the recipe, however it may take me a few days to approve it so I can make sure the link is legitimate and not spam. NO SPAM WILL BE ALLOWED, ONLY RECIPES OR YOU WILL BE BLOCKED.

I find the hardest part of making dinner isn’t the process, but figuring out what to make. So go ahead and post ONE RECIPE ONLY EACH FRIDAY in the comments or feel free to just read what others have made. Either way, I hope we all get some great ideas to make our meal planning easier.

  1. Looks like a great zucchini casserole. My DIL was looking for something new to make for the holiday so I’m going to pass your recipe on to her. I’ll be making homemade guacamole for our Labor Day BBQ. Here’s my recipe for guac:
    INGREDIENTS: 3 ripe medium avocados; 1/4 cup finely chopped onion; 1 1/2 tablespoons fresh lime juice; 1/4 cup chopped cilantro leaves; 1 large plum or Roma tomato, chopped; 1/2 teaspoon salt.

    DIRECTIONS: Place the chopped onion into a small bowl and cover with cold water. Set aside for 5 minutes, drain and then rinse. (This simple step tones down the raw flavor of the onions). Cut avocados in half lengthwise, remove the pit, scoop out the flesh and place into a bowl. Use a fork to mash the avocado into a chunky dip. Stir in the drained and rinsed onions, lime juice, cilantro, tomato and salt. Taste the guac and adjust with more salt or lime juice. Guacamole is best when eaten soon after making it but to store it, press plastic wrap down onto the guacamole and refrigerate for up to one day.

  2. This looked so yummy – I sent it to my son! He started receiving a “vegetable box” each week from the farm – he then sometimes calls to ask what goes well with the surprise veggies! We have loads of fun creating healthy meals! Thanks Diane!
