cooking until the onion is translucent

and the sausage starts to brown. Add

  • 1½ tsp. salt, or to taste
  • 1/2 tsp. pepper

  • 2 cups uncooked medium pasta shells
  • 1 sliced green onion, for garnish (optional)

Directions

  1. Cook the pasta according to the package directions, drain and set aside.
  2. Slice the Andouille sausage into small bite size pieces.
  3. In a large skillet over medium heat, add the oil and once hot add the sausage and onion. Cook until the sausage starts to brown and the onion is translucent. Add the garlic and cook one minute more.
  4. Add the tomatoes, water, thyme, basil, parsley, Cajun seasoning, salt and pepper. Stir and bring to a boil. Reduce the heat to a simmer and cook about 15-20 minutes.
  5. Add the cream and cook until hot, about 2 minutes, but do not boil.
  6. Add the pasta and toss to coat all the pasta with the sauce. Stir and cook a few minutes until all the pasta is hot. Remove from the heat, cover and let sit for about 5 minutes until most of the sauce is absorbed.
  7. Stir, garnish with green onion (optional) and serve. (I actually like this better the next day.)
