Hearty One Pot Sausage Stew

Sausage, cabbage, corn, potato, onion, tomato and seasonings all cooked in one pot and simmered to a wonderful variety of flavor in 30-45 minutes. This is a wonderful camp stew when you go camping too. My husband couldn’t stop commenting how good this was.

Add all of the prepared vegetables and sausage to a 6-quart pot. (I sliced my sausage but next time I will also quarter each piece.) Sprinkle the seasonings over the top.

Fill the pot with hot tap water, covering the vegetables. Bring to a boil and reduce heat to a low boil.

Cover and cook for 30-45 minutes or until the cabbage and potato are cooked through, stirring frequently, then serve. It’s that easy!

Ingredients

  • 1 – 14 oz. Kielbasa sausage, sliced into 1/2″ pieces then quartered
  • 1 – 14 oz Andouille sausage, sliced into 1/2″ pieces then quartered
  • 3 – 14.5 oz. cans diced tomatoes
  • 24 oz. frozen corn (keep frozen)
  • 1/2 small cabbage, cored and chopped into bitesize pieces
  • 1 medium onion, diced
  • 4 medium potatoes, peeled and cut into 1/2″ cubes
  • 1/2 tsp. Italian seasoning
  • 2 Tbsp. dried parsley
  • 1 tsp. Cajun seasoning
  • 2 tsp. salt, or to taste
  • 1/2 tsp. pepper
  • water to cover

Directions

  1.  Add all of the prepared vegetables and sausage to a 6-quart pot. Sprinkle the seasonings over the top. (In the picture I sliced my sausage, however, I will also be cutting it into quarters from now on.)

  1. That looks very delicious and hearty. I find that a more fattier meat like sausage goes so well with cabbage. It just soaks up all the juicy goodness!

  2. This looks fabulous and easy! I make a similar minestrone soup but add tomato sauce, pinto beans, and ham-hocks to season the water. I love a good soup and this one you don’t have to worry about cooking the beans! xxoo, C

    • I make uncooked corn beef, cabbage, potato etc. and cook them for 5-6 hour on low. Since the sausage is already cooked I would check the potato at 4 hours and see if they are tender, but I bet it will be.

  3. I’m sure he loves every meal you make, however, it is nice when something gets attention. I’ve found our simple meals usually hit home more than ones I have worked way too hard on!

    • I am lucky he loves 99% of what I make. His only complaint is will I make it again. I like making new recipes all the time. I made a shrimp boil last night and he said WOW a meal I get to eat more than once. Hahaha Thank you Laurel❤️
