It’s Friday What’s For Dinner 6-10-22

Anyone that makes a homemade dinner is welcome to type the name of one recipe prepared in the comments, then we can all scroll through the comments for recipe ideas. This will be a weekly Friday post and only recipes on the Friday posts will be allowed.

If someone wants your recipe and asks there will be no pressure to share it, it’s up to you. I will accept links, but only to the recipe, however it may take me a few days to approve it so I can make sure the link is legitimate and not spam. NO SPAM WILL BE ALLOWED, ONLY RECIPES OR YOU WILL BE BLOCKED.

I find the hardest part of making dinner isn’t the process, but figuring out what to make. So go ahead and post ONE RECIPE ONLY EACH FRIDAY in the comments or feel free to just read what others have made. Either way, I hope we all get some great ideas to make our meal planning easier.

  1. These remind me of my grandmother. I love cheese ball biscuits! Thanks for reminding me of this delicious dish!
    Here’s another “cheesy” recipe:
    ‘Potatoes & Eggs’:
    Here’s another easy Friday night recipe, especially for those who need a meatless meal for diet or religious purposes.
    Ingredients: peeled raw potatoes sliced as thin as you can get them (think potato chips); I usually plan 1 potato per person, depending on the size of the potato; eggs (2 per person), grated parmesan or Romano cheese, EVOO, S&P to taste.
    In a large skillet (I like cast iron for this recipe), fry potatoes in EVOO (or a combo of EVOO and regular cooking oil) and cook until golden brown. These will be thin slices so be careful not to burn them near the end of cooking time which can happen very quickly. As potatoes are nearing the desired doneness, scramble eggs in a large bowl (I plan on 2 eggs per person) and add as much or as little grated cheese to the beaten eggs as you like; season egg and cheese mixture with S&P and whisk together well. When potatoes have reached their desired doneness (I like mine a dark golden brown), drain off any excess oil if you think there’s too much in the pan and add the scrambled egg and cheese mixture, covering potatoes thoroughly. At this point you can stir all the ingredients together for a looser, chopped up potato/egg combo or you can leave the beaten eggs alone and let everything cook together until solid as you would a frittata – totally your personal preference. I like to serve this dish with a side of bacon and fruit of your choice.
    PS – Some people like to add a thinly sliced or chopped onion to the sliced potatoes before cooking; that can kick up the flavor level a notch or two, again strictly a matter of choice. Enjoy Potatoes & Eggs!

  2. Tonight, Old Fashioned peppers and eggs
    5 large eggs
    Grated cheese
    about 1/4 cup whole milk
    some garlic powder
    Whisk that all together
    2-3 red,green,orange bell peppers
    Medium onion
    EVOO

    Slice the onion into pieces and saute in a frying pan (cast iron is best).
    Slice the peppers into about 8 or so pieces and add to the onion.
    Let them all sweat down
    Mix all the other ingredients again and pour over the peppers and onions. Let that fry until the bottom firms up then put it into a 375 degree oven until the top browns.
    Serve with some good crusty bread and some white wine, or red for that matter.

  3. Oh, when I catch up and see two cheese recipes, me who loves cheese! I have never had the cheese biscuits at Red Lobster – it’s been years since I ate there. I wonder if these cheese biscuits are similar to those that everyone raves about.

  4. Hi Diane, just want to let you know … I made these delicious cheese balls! They look just like your picture (and it’s really delicious … but whether they taste like yours, is another question 😁). Oh, and you’re right … they are quite sticky while preparing – thanks for the tip of washing your hands in between the rolling process. That certainly helped (otherwise I would have been covered in a cheesy batter from my head to my toes 😅).
