Baked Cheesy Pork Chops & Potatoes

One baking dish with potatoes on the bottom, browned pork chops, a creamy sauce then two full cups of cheddar cheese to top it off. Add your favorite vegetable on the side and you have a complete meal.

Add the oil to a large skillet over medium

high heat. Salt and pepper the pork chops

on both sides then place them in the skillet.

Sear them on both sides just

until the outside starts to turn

brown, do not cook them.

Spray a 9” x 13” baking dish with

cooking oil. Preheat oven to 400º.

Spread the potatoes and onions evenly in

the baking dish. I used dehydrated onions

but you can use diced onions as well.

Lay the pork chops on top of the potatoes.

In a bowl whisk together the

milk and soup until smooth.

Pour the soup mixture over the pork

chops. Bake, uncovered for 30 minutes.

Spread the shredded cheese on top.

Bake, uncovered, for an additional

30 minutes then serve.

Ingredients

  • 1 Tbsp. vegetable oil
  • 4-6 boneless pork chops
  • salt to taste
  • pepper to taste
  • 4 medium potatoes, peeled and sliced
  • 1/2 cup diced onion 
  • 1 cup milk
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 2 cups shredded cheddar cheese

Directions

  1. Add the oil to a large skillet over medium high heat until hot. Salt and pepper the pork chops on both sides then place them into the hot oil. Sear them on both sides just until the outside starts to brown, do not cook them.
  2. Preheat the oven to 400º. 
  3. Spray a 9” x 13” baking dish with cooking oil.
  4. Spread the sliced potatoes evenly into the baking dish and top with the onions.
  5. Place the pork chops on top of the potatoes.
  6. In a bowl whisk the milk and soup together until smooth. Pour the mixture over the pork chops.
  7. Bake, uncovered, for 30 minutes.
  8. Spread the cheese evenly over the top and bake another 30 minutes then serve.
