One Pot Cabbage & Sausage

If you love cooked cabbage, you will love this recipe! Cabbage, onion, andouille sausage (or your favorite sausage) and seasonings all made on top of the stove in one pot. This is a quick and delicious meal.

In a large pot over medium heat,

cook the onions in the oil until

halfway tender, about 5 minutes.

Add the sausage and cook until

the onions are tender and the

sausage starts to brown, about

5 more minutes.

Add some cabbage stirring until it

starts to decrease in size then keep

adding more, stirring constantly,

until it is all in the pot.

Continue to cook and

stir for 10 minutes.

Add the seasonings and stir.

Cover and turn burner to low. Cook

for 30 minutes, stirring occasionally.

Cabbage should be soft when done.

Then serve!

Ingredients

  • 14 oz. andouille sausage (or your favorite) sliced into rounds then cut each round into 4 pieces 
  • 1 large onion, diced
  • 1 large head cabbage, sliced into thin strips with core discarded
  • 1 Tbsp. salt or to taste
  • 1 tsp. pepper or to taste
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1 tsp. paprika

Directions

  1. In a large pot over medium heat, add the oil and onion. Cook the onion about 5 minute or until halfway tender.
  2. Add the diced andouille sausage and cook about 5 more minutes, stirring frequently.
  3. Add cabbage to the pot, stirring until the cabbage starts to decrease in size. If you can’t get it all in at once, keep adding it until it all fits in the pot as it cooks down. Continue to cook and stir for 10 minutes.
  4. Add the rest of the ingredients and stir well. Cover, reduce heat to low and cook for 30 minutes, stirring occasionally. Cabbage should be soft when done, then serve.

  1. You could spend a happy long life eating this way. I do much the same with my weekly “melange” made every Monday or Tuesday morning … good for 4-5 days in the fridge, warmed up for one daily big meal mid-day. Big onion, several garlic cloves, 3 pkgs different frozen veg [whatever I grab from freezer], uncooked barley, seasonings usually Italianesque. Add daily portion – no more than 2 oz. of whatever meat Helen liked on our Sunday shopping, already cooked, added to the day’s portion.

  3. Cabbage is definitely an acquired taste for me over the years. I love it as Korean kimchi for instance. But like you, combining it with sausage really works in balancing some of the bitter taste of the cabbage with the savoury greasy goodness of sausage. Your recipe looks yum!

  5. A favorite dinner of mine too Diane. My mom made ours with kielbasa or smoked sausage. Who says you have to have corned beef with your cabbage?

      • Yes it does Diane. I have a hankering for those smokey links and was going to get some when I went shopping yesterday morning, but we were supposed to have severe weather last night and big-time flooding, plus we had a storm early evening yesterday, so did not want to risk losing food. I have to return to the store for perishables, so I’m going to bend my rules and get some … how to have the pasta salad is another whole story. My work computer is down again and he may have to call me tonight so I told myself – I’m already behind here, I’m coming here now and try to catch up a little.

      • You have really had some bad weather recently. I’m glad you have weathered the storms. 😀 You have had so many problems with that computer. Does your boss have his retirement date yet?

      • Between the computer issues at work and the weather – it is maddening! It is pouring very hard right now and up to an inch of rain. Anymore you can get excited by one good weather day as two lousy days are sure to follow. He has not mentioned retirement any more Diane. It was originally supposed to be 2022 but he renewed the year-to-year lease until March 2023, so it will be at least to then. He turned 75 this year … at 66 I am ready to retire and looking forward to it, even though I have no big plans at all (like traveling, etc.), just looking forward to more free time.

      • I know – it was easy to say that yes I would stay until 2022 so he got to celebrate that monumental 50 year anniversary, but now that we are in 2022, I am not enthused about dragging it out much longer. I’ve been a legal secretary for 42 years – that’s a lot of years and the last few have been really tough.

      • I agree Diane and more and more I hear of friends or people, my age or around my age, who have severe or debilitating diseases. You are one, and just this week I heard of three more people. My handyman wrote me back after I said to put me on the list for my gutters and “spring chores” he does very June or July and he wrote back and said his son-in-law is doing the gutters as he is now legally blind. He had a detached retina over ten years ago – woke up one morning – blind in one eye. I don’t know what happened … he is going to be here to show his son-in-law what else gets done (tarring on side of the house for ants, tuckpointing and any cement repair besides the usual gutters/roof & chimney check). I hope the son-in-law will be doing everything – I trusted him and I don’t want to let everyone in the world to know I live alone. My neighbor just got out of the hospital from water on the lung from long Covid. How is your daughter doing?

      • You are so right Linda. Life is short and you put in your time so it’s time to enjoy yourself. She’s doing great but uses an inhaler at times. Overall, she came close to not making it so if that’s the only thing that came out of it we can’t complain.

      • Yes, more and more I hear daily – there is someone I know or know through someone else with bad news. You did have a terrible scare with your daughter Diane. My neighbor having the water on the lung from his long Covid … he had Covid before we even heard of it. He worked in a plant and a woman in the plant had a sick husband and it was mid-December 2019 and the plant was going to be shut down between Christmas and New Year’s, but she had no more vacation time or sick time, so she had been taking care of him, felt sick, but came into work. My neighbor got sick around Christmas and said “I was sick as a dog even in January” – he lost so much time at work, he lost his job and has not worked since. He is 61 years old.

      • How sad! Things are so different now a days. If we can’t figure out the right meds for my fibromyalgia I’m not sure I can even travel. Right now I have about 1 good day a week. All we have wanted was to retire and travel. I have 1-1/2 years before Terry retires and try to get better.

      • I’m sorry to hear that Diane. You already missed your anniversary trip to Hawaii (hope I’m right about the destination) due to COVID. Are there gentle exercises you could do to build up your tolerance for walking and more rigorous types of activities that a trip would entail?

      • I’m trying my exercise bike but unfortunately I’m having breathing issues too (I’m a mess lol) and can only go 5 minutes at a time. I figure that’s better than nothing. Yes Hawaii is the trip we had to cancel.

      • I thought it was Hawaii – sigh. Walking might be easier and you were doing that with your clients and were going to walk with Terry until he hurt his foot. Tote along a portable stool or lightweight camp chair to sit on for a break … it will keep you from getting too winded. That’s rough – I’m sorry to hear you have breathing issues, so that makes it an even bigger challenge.

  6. Cabbage … that’s a veg we always got at least once a week in our hostel while in high school. It wasn’t a favourite then … but I’ve learned to enjoy it once again later in my life. And your dish looks really great – maybe it’s thanks to the sausage and paprika 😉.
