It’s Friday What’s For Dinner 5-27-22

Anyone that makes a homemade dinner is welcome to type the name of one recipe prepared in the comments, then we can all scroll through the comments for recipe ideas. This will be a weekly Friday post and only recipes on the Friday posts will be allowed.

If someone wants your recipe and asks there will be no pressure to share it, it’s up to you. I will accept links, but only to the recipe, however it may take me a few days to approve it so I can make sure the link is legitimate and not spam. NO SPAM WILL BE ALLOWED, ONLY RECIPES OR YOU WILL BE BLOCKED.

I find the hardest part of making dinner isn’t the process, but figuring out what to make. So go ahead and post ONE RECIPE ONLY EACH FRIDAY in the comments or feel free to just read what others have made. Either way, I hope we all get some great ideas to make our meal planning easier.

I will not be commenting on your ”It’s Friday What’s For Dinner” recipe as this is your recipes to share with everyone.

My “It’s Friday What’s For Dinner” in the picture above is ROTINI PIZZA CASSEROLE.

  1. Stuffed breasts with mushrooms.

Sauté the mushrooms in olive oil with some onion and garlic and salt to taste.
Butterfly boneless breasts and remove excess fat.
Add some bread crumbs and parmesan to the mushrooms and season the breasts with salt and pepper (optional). Stuff the breasts with the mushroom mixture and seal them with a toothpick or two. Put them into a cast iron frying pan, lightly oiled, season the top of the breasts as desired and put them into a 375 degree oven for about 30 minutes or until done.
You can also add some mozzarella to the stuffing, which I do like, but leave it out if you don’t care for it.
Serve immediately with a nice sauvignon blanc and some soft music.
(As a suggestion, either on Spotify or Pandora, look up Mario Frangoulis or Anna Tattangelo. Beautiful music that can set a mood.)

  3. Yum! I bookmarked that pizza casserole!

My recipe is Salmon in a Basil-Corn-Cream sauce. I just kind of made it up while thinking about a salmon dish I used to order at Granville in Burbank.

I basically just sauteed some salmon and then the sauce was just sauteed frozen corn, a couple of garlic cloves, some green onion, and then heavy cream, dried basil (fresh would be better of course), salt & pepper. Oh! And then I suddenly remembered that Granville serves it on mashed potatoes so I quickly peeled a potato, cut it in tiny pieces and let the potato boil in the cream sauce until tender. AND THEN, this morning I had the leftover sauce on a biscuit. lol
